About this Cook
Homemaker and college student. Working on earning my bachelor's degree in Information Technology Web Design.
My favorite things to cook
I like to have "hands on" while cooking. I get a little bored when I use the crock pot, or when I make my Italian sauce for pasta. I like trying lots of new things. Because of our cultures we eat mostly Italian and Mexican cuisine.
My favorite family cooking traditions
I love baking cookies and honey balls for the holidays. I loved making our own seafood dish on Christmas Eve, and us making our very own Menudo together.
My cooking triumphs
Making a delicious Christmas dinner that the whole family enjoyed and a very good friend (who is also an excellent cook) complimented my meal and went for seconds!
My cooking tragedies
Just yesterday I attempted "chilaquiles" again; I just don't feel it with that recipe. I tried to make chicken drumettes at one time "American style" and they were undercooked and bloody at the bone. Yuck... I'm sure there will be more tragedies in the future ;)

Roast Sticky Chicken-Rotisserie Style
Well, I unintentionally marinated this 4.5 pound bird for two nights. I slow roasted in for over five hours. When I was sure it was done; I left it in the oven on 170 degrees just to keep it warm for dinner. The meat was fall off the bone tender, the breasts were still moist and flavorful. When it comes to cooking whole chickens, I will stick to this recipe from now on! Even my extremely picky 10 and 13 year old girls both had extras and cleaned the meat off of their plates immediately! My two year old boy ate it all up and asked for more. My boyfriend helped himself to a little bit more. I think the onions in the cavity make all of the difference... and the juices were way delicious. I served the juices as is because I didn't want to alter the flavors at all by making a gravy. Thank you for the recipe. I'd give it 10 stars if I could!!!!

Sweet & Sour Brussels Sprouts
Do not use frozen brussels sprouts for this will be ruined. This recipe is very nice, and compliments a holiday meal very well.

Cheesy Acorn Squash
The whole family devoured it! I didn't have any mushrooms, and they weren't even missed! The slight sweetness of the squash, slightly caramelized onions and celery made THIS recipe a keeper! The combination of flavors just were exceptional in the palate. Thank you for sharing the recipe.
