Thai Chicken Satay

So, so Delish! as written mostly..didn't have chili oil, so used toasted sesame oil...used chicken tenderloins for speed and only marinated 30 minutes...but it was unbelievably tender and flavorful! (Grilled on a kamado grill.)

Shoyu Chicken

Only had two chicken breasts and not alot of time so threw it all together, incl optional ingredients, without really measuring due to rushing to be able to marinate 1 hour before grilling on the George Foreman. It was amazingly delicious!

Chinese Pork Chops

Easy and delicious! The sauce is soooo good...subbed the celery with carrots because I was out. Added fresh ginger and garlic to sauce. Also, I removed the chops, but didn't strain the veggies...mixed cornstarch and water and added that to veggie/liquid mixture and thickened it that way. (Don't understand why you'd only want one cup of this amazing sauce.) Made steamed brocolli for a side, and ended up pouring sauce on that, too. Every bite was fantastic! Thanks for a super recipe!

Grilled Mongolian Pork Chops

Amazing! Fantastic! Made a few substitutions, but it didn't matter to outcome. Thought I had rice vinegar, but didn't, so had to sub. Found Mirin in the pantry (Japanese sweeten sake, made from rice wine), so used that insead of rice vinegar and did not add the sugar called for, since it was sweetened already. Also, couldn't find sherry vinegar, so used cider vinegar. For the dipping sauce, used sour cream instead of creme fraiche. Marinated pork chops overnight and hubby grilled them in his kamado grill. Made a great Father's Day meal! Served with grilled corn and braised cabbage. PS. You gotta watch Chef John's video...he is a hoot (as well as a talented chef)! Note: The mustard sauce balances the sweetness of the the marinade...it's a must have for the complete experience! :-)

Omelet Biscuit Cups

My 18yr old loves these. Gave this 5 stars because it's such a great idea and they are delicious. You can customize them to your own liking. Rolled and cut out my own biscuits because I thought the refrigerated type would get tough after freezing and reheating. Used crumbled cooked bacon and shredded cheese, not ham and mushrooms. Freezes great - now my son can grab a couple for breakfast on his way out to work - saving his hard earned money by not stopping for fast food breakfast.

Strawberry Lemonade Ice Pops

Sesame Pasta Chicken Salad

Made this twice. First with whole wheat pasta and the second time with broccoli slaw instead of pasta (to cut down on the carbs, but ended up adding a pack of ramen noodles for added crunch. :-P) Both versions were yummy, yummy, yummy! Don't leave out the cilantro...it adds great flavor!

Indian Chicken Curry II

This smells wonderful and taste just as good. The first time I made it, though, used greek yogurt, cuz that's what I had. BIG MISTAKE...it mutes all the other spices and makes a wonderful dish just ho-hum. Make it as written, maybe add more curry, and use regular plain yogurt, and you've got a winner.

Apple Crisp II

This is a wonderful apple crisp. Bought a 4lb bag of Honey Crisp apples at Sam's Club, ate one and didn't like it...more tart than usual. So, I thought, dang, so much for eating healthy...I have to make a crisp now. Peeled, cored and sliced the rest of bag and it measured out 10 cups perfectly. Used a hand held apple slicer and then cut each of those slices in half lengthwise. Followed recipe, except made 1 1/2 times the topping and had plenty for top and bottom. As per other reviews, I cut butter into flour/oat/sugar mixture instead of melting it. Didn't use water, probably wouldn't have hurt it any, though. Baked for 1 hour to compensate for extra topping. Perfectly delicious served hot with a nice scoop of vanilla ice cream! Family was all smiles. Will add chopped pecans next time to put it over the top.

Orange Chicken Stir Fry

Great recipe! Soooo delicious! Used green pepper and pineapple chunks instead of bean sprouts...they are listed as optional anyway. If you like bean sprouts, then I'm sure it would still be 5 stars. Also, I used pineapple juice from the can of pineapple instead of orange juice, but I still think it would've been 5 stars with OJ! Did everything else according to the recipe. Think it would be great over rice and garnished with cashews. Oh, I almost forgot...reduced salt content to 1/2 teaspoon. Kept everything the same, even the zest. That's all the changes, I swear! ;-)

Sweet and Spicy Sweet Potatoes

Used Orange Infused Olive Oil instead of plain olive oil to put it over the top! Also, didn't measure spices, because I was in a hurry, just sprinkled (to lightly cover) with garlic powder, paprika, cinnamon, salt, black pepper, cayenne and at least 3 tablespoons brown sugar. Tossed to be sure evenly coated and baked as directed. Yum, yum, yum!

Baker's Secret Pie Crust

Today I used the store brand 'ready to unroll and bake' type pie crust and realized I should have taken the time to make this crust again, like I did this past thanksgiving...but I was lazy. What a sad little crust...next time I'll come back to this recipe or just not make a pie at all! Baker's Secret Pie Crust comes out so wonderful and you'll savor every bite and NOT be let down.

Extreme Chocolate Cake

Yes, this IS the best cake in the world! Amazingly moist, and melt in your mouth delicious. Replaced the the boiling water with freshly brewed hot coffee. Also, used Hershey's Special Dark cocoa in both the cake and frosting. Wished I'd taken a picture...it was very dark and pretty, but it went too fast! This will be my 'go to' chocolate cake from now on!

Lentil and Sausage Soup

Gave it 5 stars even though I made minor changes due to ingredients on hand. Used herbs de provence instead of oregano, thyme and basil. Used polish kielbasa sausage instead of italian and chopped carrots instead of shredding...and more of them. Left out pasta and 2 cups of the water. My hubby said this was the best soup he ever ate in his life! I have to agree! Must try!

Mushroom Chicken Piccata

Outstanding recipe! I cut butter in half and replaced other half with olive oil. Also, pounded chicken breast to about 1/2 inch. They were large and only used four. I did remove chicken before adding the onions and mushrooms...they were cooked through since thin, and added them back on top in last 10 minutes of cooking time. Came out delicious! Thanks, Karen, for a super recipe.
