Caribbean Nachos

Fantastic nachos. Made as directed even though I was apprehensive of all the bell peppers and onions. Perfect amount of ingredients and wonderful blend of flavors! Thanks for sharing. I served it with Planter's Punch...equal amounts of Myers rum, oj and pineapple juice and splash of grenadine. YUM!

Sweet Potato and Black Bean Chili

Loved, loved, loved this flavorful chili. Didn't add chipotle, discarded the jalepeno seeds and used regular chili powder - other than that, made as directed. Only gave 4 stars because too spicy if you don't tone it down.

Mushroom Chicken Piccata

Outstanding recipe! I cut butter in half and replaced other half with olive oil. Also, pounded chicken breast to about 1/2 inch. They were large and only used four. I did remove chicken before adding the onions and mushrooms...they were cooked through since thin, and added them back on top in last 10 minutes of cooking time. Came out delicious! Thanks, Karen, for a super recipe.

Very good. Only tip I can offer to improve (my own experience) is to make sure that the pocket is cut edge to edge so that you get the yummy filling in every bite!

Whole Grain Waffles

Very hearty, tasty and so healthy for you. Have made as waffles with Belgian waffle maker and made as pancakes on griddle. Eliminated oil for pancakes. Both so very good!

The Best Thai Peanut Sauce

Reduced peanut butter down to 3/4 cup and doubled the coconut milk. Wonderfully delicious on Thai Chicken Satay (this site) and jasmine rice. Excellent with side dish of Sesame Broccli also this site. Made this for hubby, who said it was better than Thai Thai by Ricky restaurant (in Mandeville). LOL!

Caramelized Baked Chicken

These are excellent! Used wings - separated into two pieces at joint. Followed advice from another reviewer by making sauce with cornstarch first. Rave reviews from friends. Will be making them again for the Saints/Colts Superbowl party. WHO DAT!

Grilled Mongolian Pork Chops

Amazing! Fantastic! Made a few substitutions, but it didn't matter to outcome. Thought I had rice vinegar, but didn't, so had to sub. Found Mirin in the pantry (Japanese sweeten sake, made from rice wine), so used that insead of rice vinegar and did not add the sugar called for, since it was sweetened already. Also, couldn't find sherry vinegar, so used cider vinegar. For the dipping sauce, used sour cream instead of creme fraiche. Marinated pork chops overnight and hubby grilled them in his kamado grill. Made a great Father's Day meal! Served with grilled corn and braised cabbage. PS. You gotta watch Chef John's video...he is a hoot (as well as a talented chef)! Note: The mustard sauce balances the sweetness of the the marinade...it's a must have for the complete experience! :-)

Shoyu Chicken

Only had two chicken breasts and not alot of time so threw it all together, incl optional ingredients, without really measuring due to rushing to be able to marinate 1 hour before grilling on the George Foreman. It was amazingly delicious!

Spinach Lentil Soup

Very good and satisfying soup. A 5 star with the following adjustments. If you don't want to cook rice separately, throw in with lentils; brown rice is healthier choice, but needs longer cooking time, and soup taste better when simmered longer anyway. (Remember to use enough liquid for the rice to absorb.) Double the sausage, add 1 can diced tomatoes, switch amounts of water and chicken stock, correct with salt and freshly cracked black pepper. Don't forget the hot crusty bread!

JELL-O® 'Dive-on-In' Cake

Living in south Louisiana, we thought it would be appropriate to make it a beach and add chocolate chips to the graham craker/brown sugar "sand" and call it 'Life's a beach and Then You Get Tarballs Cake". (See photo submitted today) The cake / jello combination was surprisingly delicious! We did add cream cheese to the whipped topping and some vanilla. Will definetly make again...need to use up all the 'decorations' anyway!

Decadent Chocolate Orange Cake

We are huge fans of those chocolate orange candy balls that you eat in sections, like an orange - this taste just like those! Just a word of advise regarding pan size...I didn't have 8 inch pans and used 9 in pans, and the layers were rather thin and kept sliding around (until it was refrigerated...then firmed up). I also increased the ingredients for the filling and ganache, but didn't use it all...so next time I'll run to Walmart for 8 inch pans and make the recipe as stated. It's outstanding!

Chicken Lollipops

My hubby made these today. There are only 2 teaspoons of liquid in the marinade! Recipe states to marinate the wings and then remove the wings from marinade and add the cornstarch to marinade to make a batter to dip the wings in. Problem is, there is hardly enough liquid to marinate the wings in much less have any to make a batter. He ended up just rubbing the mixture on the 10 drumettes, let sit 30 minutes (didn't push meat down) and grilling them. Excellent flavor, but gave this recipe only one star for the obvious flaw.

Thai Chicken Satay

So, so Delish! as written mostly..didn't have chili oil, so used toasted sesame oil...used chicken tenderloins for speed and only marinated 30 minutes...but it was unbelievably tender and flavorful! (Grilled on a kamado grill.)

Peach Cheesecake

Made this today for Father's Day so I wanted it to be extra special; I had some blueberries that I'd just picked at a local farm and made a blueberry sauce as follows: 1 1/2 cups fresh blueberries, 1/4 cup water, 1/3 to 1/2 cup sugar, 1 tablespoon cornstarch, 1/4 teaspoon almond extract. Put berries and next 3 ingredients in a saucepan, bring to boil, stirring frequently until spoon is coated - approximately 20 to 35 minutes. Remove from heat and stir in 1/4 teaspoon almond extract. Ladle a couple of heaping spoonfulls on individual servings of Peach Cheesecake. Very special indeed! Everyone love it! (Texture of 'cheesecake' more like a cobbler, but still very tasty!)

Doberge Cake

I grew up eating bakery made doberge cakes and never, ever thought to attempt to make one myself, but wanted a chocolate raspberry variation for my daughter's birthday last September, which local bakeries didn't have. I couldn't believe it when I found doberge on allrecipes!! So, made it myself using this recipe, and added a homemade raspberry sauce between the layers with the custard filling. Phenomenal! Well, I plan on making it a third time and remembered to review it and give a warning...don't use this ganache recipe. It did not work for me either time I made it...equal amounts chocolate and cream is way too runny...that's why I only gave it 4 stars. I found a recipe that uses 1 part cream to 2 parts chocolate. Also, give all your attention to the custard when making it...careful not to burn it or you will have to throw it out and start again(been there, done that). All and all well worth all the effort!

Chinese Pork Chops

Easy and delicious! The sauce is soooo good...subbed the celery with carrots because I was out. Added fresh ginger and garlic to sauce. Also, I removed the chops, but didn't strain the veggies...mixed cornstarch and water and added that to veggie/liquid mixture and thickened it that way. (Don't understand why you'd only want one cup of this amazing sauce.) Made steamed brocolli for a side, and ended up pouring sauce on that, too. Every bite was fantastic! Thanks for a super recipe!
