Cottage Pudding - Upside Down Cake

I thought this was okay. Good part was it was pretty easy to make and looked nice. Bad part is that I thought it had a weird taste. Not sure if it was too much baking powder maybe? Anyway, I would have given it 3 stars because I didn't love it but most of the people who I made it for really liked it. Anyway, one complaint about the proportions. I doubled it to make in a 9X13 but 6 apples was WAY, WAY too many. Probably 3 would have been enough. I also reduced the sugar for the cake part and it was more than enough. But that's a matter of taste.

Apple Squares

I thought this was awesome. My kids also loved it. I just changed the amount of apples and sugar a little. I doubled the recipe and made two pans worth. I made one with walnuts and one without cause my kids don't like walnuts. Instead of doubling everything, this is how I changed it. I used 1.5 cups of apples and 3/4 cup of each of the brown and white sugar. So basically more apples and less sugar. For the topping I didn't double it and it was more than enough. Loved this and will make it again for sure. Thanks for a great recipe.

Yummy Blueberry Cobbler

I have to say this was fantastic!!! It did come a little runny and for that I was going to take away a star but the taste is so darn good I just can't do that. LOL It was a really easy recipe to make too which is a plus. As per some reviewers advice I cut the sugar to 1 cup for the batter and 3/4 cup for the topping. Still it was quite sweet.

Coconut Curry Tofu

Very good. Once all the chopping is done this recipe cooks up very quickly and tastes great. I originally gave it 4 stars but changed it to 5 because it tastes even better the next day. I'm just loving it.

Wine and Dijon Marinated Pork Loin

I have to start this off by saying I don't like pork. This, however, was amazing. I used a pork loin as I didn't have tenderloin but it was fantastic. Even my picky 14 year old son loved it. Will be making this again. Thanks for a great recipe. Just wanted to add that I didn't use any salt and it was salty enough. Also I will use less garlic. I already reduced it to 2 cloves but it was still too much for my taste. Oh and I didn't have dijon mustard so I just used regular spicy brown mustard.

Veneto Chicken

I made this exactly as the recipe said except instead of fresh tomatoes I used canned whole tomatoes that I cut up a bit. Easy, great recipe that looks really nice. I think I will add a little garlic next time and perhaps a dot more balsamic vinegar as it was flavorful but not as flavorful as I'd like. I served it with polenta. Very nice dish.

I thought this was great though I used some fresh veggies and some frozen. Didn't add the extra salt and added some small pasta to the left overs the next day. Will make this again for sure.

I need to make these again. I thought they were just okay but I'm willing to try them one more time to see if I like them better next time. Found that they got a little dry after being in the fridge for a while and were hard to press the hole in them without them falling apart. This was not the case with the first batch I baked but by the time I went to make the remaining dough this is what happened.

The Best Rolled Sugar Cookies

Very nice recipe. I didn't find it any easier than other rolled sugar cookie recipes that I've tried BUT I found it much better tasting. These were really good so will use this recipe for my xmas cookies from now on. Thank you.

Chewy Noels

This recipe was easy and good. It's just like a Noel cookie my mom used to make when I was a kid. She cut them into longer bars and then used green icing to write "noel" on each cookie. Brought back memories making these.

Honey Milk Tea - Hong Kong Style

At first I wasn't sure if I liked this so much but it grew on me. I made a lot so there was leftovers. I enjoyed it more the next day after being refrigerated for a day. I don't know if I was more in the mood for it or it actually got better sitting there but I did like it quite a bit the second day.

Spicy Sausage and Rice Casserole

This was very tasty and good but pretty spicy so adjust according to taste. The only think I found was that it took way longer than an hour in the oven for the rice to cook. Probably closer to 1.5 hours. I did not transfer mine to a 9x13 pan but instead kept it in the skillet and put that in the oven as my skillet is ovenproof. I don't know if that made a difference as far as the cooking time. I also had to add extra liquid to it before it was finally cooked enough. But overall a very nice recipe.

Classic Goulash

I really liked this recipe. It was better than I expected. I followed everything exactly as written with the exception of using chopped chicken instead of beef for the reduced fat value. It was excellent with the chicken.

Fresh Fig Cake

I thought this cake was good but not great. I think I would have liked it better without the glaze/fig filling as that made it a little too sweet for me. I think the cake would be great with some walnuts in it with a cup of coffee. Yum. But overall it was a great use of over-ripe figs.
