Cookie Mix in a Jar VI

I tried this recipe ahead of time and loved it, so I gave these out for holiday gifts. Everyone whos tried them have loved them, but my sister was honest: she said the cookies were good, but spent half an hour chipping the brown sugar out of the jar. I hadn't thought about that factor, but it makes since that four months later the brown sugar would solidify when it was packed in so tightly. Other than that, a great recipe and turns out very pretty. also: crisco works just fine instead of parchment paper.

All-Natural Chicken Pot Pie

Good recipe...the crust gave me some trouble though, and in the end the cinnamon and nutmeg didn't taste right with the chicken and veggies. I made a couple other minor changes though, to fit my family's tastes...about half the onion and potatoes...and 1 1/2 Cups baby carrots chopped into thirds and 1 1/2 Cups celery. Didn't have sage, and used canned peas. Aside from the crust though, we loved the finished product! My husband had multiple servings and was still raving about it the next morning.

Pumpkin Bread II

The recipe says to cook this bread for 40-50 mins, but my bread has now been in the oven for an hour, and no where near being done. I should have read the reviews before making it. It is simple enough to make, but I probably should have split it between two pans. Maybe it will still turn out okay if I leave it in longer, but it's probably gonna burn before it finishes in the middle.

Maria's Stuffed Chicken Breasts

This was good, but not astounding, like I expected. I did make a few changes, though. First of all, I used 3 cloves garlic. I also made half the amount of stuffing the recipe called for, and only used about half of that...there is no way I'd be able to fit it all in.

Chicken Crunch

I skipped the chicken soup and used another brand of stuffing. It turned out really good...and very easy chicken dish to make when hubby gets chicken strips instead of breasts. lol

Acorn Squash Soup

I used this as a starter outline, basically. I was having a few people over and made bread and someone else was bringing ham...and someone else brought cake for desert. I thought a soup would be a great addition to our mini-potluck. I happened to have an acorn squash that I was wary of trying (never had winter squash before), so I figured if I didn't like it someone would. Anyway.... I wasn't sure who all would show, but it was possible that there would be someone allergic to gluten and a vegetarian, so I wanted to be sure that at least the soup would be fine for both of them. So I left out the flour, and replaced the chicken broth with vegetable broth. I omitted the chicken bouillon and added a little Adobo spice. I didn't have any dill weed, so I added a bit of juice from the pickle jar (as ridiculous as that may sound). After it was all put together, I realized that it was much too watery for our taste and there wasn't enough of it. So we added some potatoes and more chicken broth and topped it with shredded cheddar cheese instead of bacon. It was absolutely delicious!! Everyone loved it, and it went great with homemade wheat bread and ham. Even I liked it, and I'm not a big fan of soup.

Perfect Berry Shortcakes

I am glad I searched for a recipe rather than using my mom's shortcake recipe, after-all. (Don't tell her I said so, but this recipe is waay better than hers. haha) I only used 16 ounces of fresh strawberries and no frozen berries, and this was enough for 5 of the 6 cakes. The sixth cake was good just with cool whip on it though. (I used store-bought whip cream.) Absolutely delicious! I will certainly make this again.

Easy Broccoli Quiche

I made this for my boyfriend and he loved it. (I'm not big on quiche.) I made it with cheddar cheese though, because we were out of mozzarella. The only complaint I have about the recipe is that all the ingredients did not fit in the pan. Once it came to pouring the egg mixture in, I was almost out of space. I filled it to the brim and still left a bit out. It still turned out fine though. I also used frozen broccoli left over from the previous night's meal, and about a quarter of a red onion.

Beer Roasted Lime Chicken

This was DELICIOUS! I used 1 1/2 limes, 1/2 tablespoon salt, a tablespoon rosemary, and added some fresh garlic inside. It turned out so good!

Speedy Salmon Patties

This was my first time cooking with canned salmon, and next time I will definitely buy the boneless skinless salmon. It was a terrible experience picking out all the bones. Anyways, I used 9 (roasted vegetable) Ritz crackers instead of saltines because that's what I had. I also added a minced clove of garlic. My boyfriend and I loved them! However, I believe next time I will use olive oil instead of butter. used much more than 2 tsp.

Strawberry Nut Bread

I had some difficulties with this bread....more than just difficulties really. It was a complete failure. I believe all the strawberry juice drained from the strawberries and sunk to the bottom. I cooked it for well over the suggested time, but would not cook through. It smelled absolutely delicious though with the cinnamon. perhaps I will try the recipe with a different fruit.

Hawaiian Nut Loaf

I absolutely love this bread, and so does everyone I've made it for. Normally, I can not stand to eat bread plain with no butter on it or anything, but this one is perfect alone. It is very crumbly though. I use pecans instead of walnuts, and add 1/3C coconut, and a 20oz can pineapple instead of a 15oz can.

I used garlic butter crescent rolls for this, and they turned out absolutely delicious. However. I had a very difficult time cutting them, and did not get as many per roll as the recipe says.
