Lower Fat Banana Bread II
This was pretty good. I don't really have it with a homemade that is "regular" fat, but I enjoyed it and my Hubby did also. I substituted 3/4 cup of flour for wheat flour, added 1/2 cup of brown sugar and 2 tablespoons of butter and about 2-3 tablespoons of sour cream to make it a little more moist. It turned out really well as a healthy alternative to regular banana bread. I would definitely make it again, and probably add more sour cream, cinnamon like mentioned in other reviews, and more bananas to give it some more flavor.

Soy Sauce Chicken and Rice
This was good. My husband thoroughly enjoyed it. I made some modifications to the recipe as well based on other suggestions. I didn't have cream of celery so just used cream of chicken + cream of mushroom soup. I upped the onion to about 3/4 of a cup. I didn't have chicken breasts so just chopped up a whole chicken which is probably cheaper. followed the recipe but instead of baked casserole I poured over brown rice. left out the mushrooms and used olive oil instead. pretty tasty, although i'm worried that the salt/sodium content is pretty high in this dish.

Flounder Mediterranean
this was a great recipe. I RARELY cook without some type of seasoning- salt, pepper, etc, but this recipe did not need it! I left out the capers + wine because I didn't have any (white wine) at the time. I also used dried basil (not fresh). i'm almost certain that it would have enhanced the recipe. But I do not feel it was any less tasty without it. definitely recommended.
