My favorite things to cook
Easy, rib-sticking comfort foods that make people happy they ate at my table. I cook for all holidays, special events, and for a community meal every month. I also like to put my own spin on recipes when I try them. I like to cook with the very best foods that are fresh and organic, when possible, very little processed food, and wholesome foods that are good for health.

Kelsey's Cheesy Bacon Breasts
Very good and easy. I don't know if most people did not read the recipe right, but it says to use 4 pieces of COOKED bacon. Most people on here made comments about needing to precook the bacon first.... Anyway, I only used two chicken breasts, used only 1 tsp of mustard, and waited until 10 minutes before chicken was done to add the cheese. Very good and easy. Will make again.

Homefried Potatoes with Garlic and Bacon
These are amazingly good and similar to potatoes I already cook. I add grated Cheddar cheese and chopped chives to make these even better. Yum!

Country Style Fried Potatoes
These are a good basic recipe, but the use of bacon grease makes these healthy (shortening is hydrogenated and full of trans fat and there is nothing good about any kind of vegetable oil as it is harmful for your heart) and delicious. I save all my bacon fat in a large mug in the refrigerator for when I need it to fry with or to add some flavor to beans and other foods. I like to chop onions and cook in mine for added pizzaz. Shredded cheddar and frshly snipped chives added when done sends these over the top.
