Healing Cabbage Soup

I add an extra can of tomatoes (I don't drain them), 2 thinly sliced carrots, 2 thinly sliced zuchinnis and serve with a couple boiled potatoes (don't cook these in the soup, or they get crumbly and gross). Also, I add some Italian seasoning (about 1-2 tsps) for extra flavor. SO cheap, and very delicious.

Spaghetti Squash Saute

This is a great recipe for cooking the squash, generally. I wouldn't say it is "crunchy," but cooked for 40 minutes it does have the consistency of a slightly undercooked potato, if that makes sense. I dressed this as if it were pasta & meatballs -- I cooked some meatballs from frozen as the squash was baking in the oven, and then popped them a saucepan with in a jar of sauce and 2 diced tomatoes. It's not pasta, but it's still VERY good! :)

Zippy Summer Shrimp

Fantastic! Very easy. I followed some of the reviews below and used de-veined, partially shelled fresh shrimp -- I wouldn't have done it any other way. The flavor really soaks into the shrimp. I served with whole wheat fettucini & some parmesan Yum! Thanks for this recipe!!

Erin's Indonesian Chicken

Don't get me wrong, I LOVE peanut butter.. but I did NOT love this recipe. I followed it exactly and it just tasted like chicken and green beans rolled in PB. My boyfriend thought it was ok, but I could barely eat it. It needs some drastic changes. I will not make this again.

Super Grilled Salmon

I had to try this simply because I have never seen a red wine salmon marinade before. The fish was very tasty, and the gravy was good, but I think I love the taste of salmon too much to make this recipe a bunch. Great to change it up, though - thanks for the recipe, I plan on trying with chicken next!

Feta Chicken

Great recipe & very easy to do. I added spinach into the "stuffing" to give it some extra vitamins. I used whole sun dried tomatoes and fresh basil. I served the chicken with bowtie pasta in a light fresh tomato sauce & broccoli, but still searching for that complimentary side for this dish. Per some of the recommendations, I drizzled melted butter on the top of the chicken before I popped it in the oven. Definitely use more breadcrumbs than the recipes states. VERY delicious & tender, & will make again :)

Robin's Quinoa with Mushrooms and Spinach

WOW! This is a great recipe. I should start by saying that I usually don't like quinoa, but wanted to try this recipe because it was so well reviewed. I love veggies, so I added in some zuchinni with the onion, and folded in one tomato and fresh corn-off-the-cob with the spinach. I also added some chicken to make it more of a whole meal for the BF (2 cubed chicken breasts, marinated in OJ, salt, pepper.. splash of white wine and then a tsp of honey once the chicken is white/cooked). SUPER recipe, and I will definitely be making this again -- frequently!!

Salmon and Spinach Fettuccine

Love the base of this recipe -- not too creamy, not to heavy. I used 2 cups of uncooked spinach, added 2 handfuls of crimini mushrooms, 1 clove garlic, 1.5 tsps Italian seasoning to the veggie mixture. I also added salt, and 1/4 cup white wine. Could have done without the salmon (I was not a fan, and I love salmon), because the sauce alone is so tasty. All in all, an AWESOME dish -- and such a hit! I will definitely be making this again, with my "tweaks" and perhaps with chicken or no meat next time.

Baked Halibut Steaks

This is a FANTASTIC recipe and so EASY! I got one 0.9lb for myself & bf and marinated the fish steak in the juice of half a lemon. Salted both sides, and added a pinch of pepper, and let that sit in the fridge while I did the prep work. I used 1 large roma tomato and 2 small zuchinnis to amp up the veggies, and surrounded the fish with them in the baking dish. I also used 1 large clove garlic, and half a small sweet onion. Perfect! I will be making this frequently!
