Honey Cornbread

Reviewed: Mar. 7, 2010
Great recipe. The first time I tried it I wanted it to be more moist--next time I added a combined 1/4 cup of milk and honey and it was perfect.

Ultimate Shrimp Scampi

I made alterations to this recipe but it's a great base for a wonderful dinner--adding avacado is a creative way to add color and flavor. I used a ton of white wine and all organic ingredients.

Tofu Lasagna

Reviewed: Feb. 27, 2010
I will make this again but I do not suggest following the recipe exactly. I used a can of sauce (always doctored-up with extra garli and wine, Newan's Own Traditional Herb Organic),omitted the nutmeg, and added lots of onion and peppers pre-cooked in olive oil with wilted spinach. This recipe looked boring to me without the additions but it's a good base reference for a vegetarian dish like this one.

Slow Cooker Adobo Chicken

Reviewed: Feb. 27, 2010
Very, very yummy. Next time I will cut the soy sauce, howerver. Tastes yummy but the amount of sodium in the dish is a bit unhealthy. Will definitely make this again with some adjustments and creativity (I might add green onions and red peppers next time as well as reducing the sauce down a bit once the chicken is cooked thoroughly).

Snickerdoodles II

Reviewed: Feb. 27, 2010
These are my husband's favorite cookies. I make the following adjustments when I make them: 1/4 cup less flour; 2 tablespoons extra butter and shortening; 1 tablespoon of vanilla, a few dashes of cinnamon, and a sprinkle of nutmeg to the batter. I also lightly flatten the cookies with my palm and sprinkle extra cinnamon/sugar mix to the top as well as cooking them at a lower temp for longer because I make very big cookies.
