I don't really like black-eyed peas, but my husband loves them. This was the best black-eyed peas I've ever fixed. I changed some ingredients, added some things, and omitted the jalapeno and cumin. I used a package of bacon and a little left over ham from Christmas. I cut the bacon and ham in pieces and fried together until crispy. I then removed the bacon and ham, saving some of the bacon drippings to saute 1/2 a package of frozen tri-colored peppers and onions, one fresh onion, and about 2 teaspoons jarred minced garlic. Once the peppers, onions, and garlic were sauteed, I added 3 cans of black-eyed peas with liquid (instead of using dry peas). I added 3 beef bouillon (instead of 1 chicken bouillon), 1 tsp. salt, 1/2 tsp. pepper, one large can of chopped green chilis, and 1 package of crushed red peppers from a pizza restaurant. I then added 2 handfuls of brown sugar, mixed it all together and let it simmer about 45 minutes until all the liquid was absorbed. I will be making this for New Year's Day every year from now on! Served with corned beef and cabbage, this was the most amazing New Year's Day dinner we've ever had. It was beyond yummy and delicious!!!
