Easy Broccoli Quiche

I made with spinach instead of broccoli and sauteed vegs in olive oil instead of butter. I added red peppers for color, two packages of pre-cooked bacon, and because I didn't have milk, I used one can of evaporated milk. I also wanted to make two pies so I added 3 additional eggs. I sauteed the onions, garlic, red peppers, and spinach, added in the cooked bacon, and mixed into the egg and milk mixture. I took other reviewers' suggestions and put a layer of cheese (swiss and sharp cheddar) in the premade pie crusts and baked for about 7 minutes and then let cool. I then poured the egg, milk, vegs, and bacon mixture into the two crusts and baked at 350 for about 30 minutes. I then covered the top with a mixture of swiss and sharp cheddar cheese and baked about 5 minutes longer. Oh my, this is the most delicious and easy quiche my family has ever eaten. It received 5 thumbs up from everyone, followed by many requests to make it again in the very near future -- even by my husband who said he didn't like quiche!!!

Slow Cooker Spicy Black-Eyed Peas

I don't really like black-eyed peas, but my husband loves them. This was the best black-eyed peas I've ever fixed. I changed some ingredients, added some things, and omitted the jalapeno and cumin. I used a package of bacon and a little left over ham from Christmas. I cut the bacon and ham in pieces and fried together until crispy. I then removed the bacon and ham, saving some of the bacon drippings to saute 1/2 a package of frozen tri-colored peppers and onions, one fresh onion, and about 2 teaspoons jarred minced garlic. Once the peppers, onions, and garlic were sauteed, I added 3 cans of black-eyed peas with liquid (instead of using dry peas). I added 3 beef bouillon (instead of 1 chicken bouillon), 1 tsp. salt, 1/2 tsp. pepper, one large can of chopped green chilis, and 1 package of crushed red peppers from a pizza restaurant. I then added 2 handfuls of brown sugar, mixed it all together and let it simmer about 45 minutes until all the liquid was absorbed. I will be making this for New Year's Day every year from now on! Served with corned beef and cabbage, this was the most amazing New Year's Day dinner we've ever had. It was beyond yummy and delicious!!!

Black Beans and Pork Chops

Excellent and so easy!!! I added a can of corn because I like the combination of black beans, salsa, and corn, and let it simmer about 40 minutes until the pork was nice and tender. I'm a plain salt & pepper cook who would rather eat out because it's quick and easy. With recipes like this, there's no need to eat out anymore.

Spicy and Sweet Spinach

Very different for those like me who are "boring" salt & pepper cooks. I didn't have golden raisins so I used regular raisins, added some sliced almonds, and red wine vinegar as others had suggested. Didn't care for it with first bite, but it grew on me. I would try this again, but I would add some more red wine vinegar when I dish-it-up.
