Chicken Arroz Caldo (Chicken Rice Porridge)

My husband was feeling ill and I thought it would be nice to make him this dish. My Mom used to make it for me when I was feeling under the weather. Reminded me of my childhood! I didn't add the extra salt for taste. I felt the fish sauce gave it enough salt. I also used boneless chicken thighs cut up. It's just easier to eat, but I do feel the chicken with bones adds more flavor. Thanks for the recipe! I am usually not a strong cook but feel like this came out perfect!

Awesome Chicken and Yellow Rice Casserole

I honestly have a difficult time making anything taste good. This recipe is a keeper for me. Like everyone else, I adjusted the recipe a bit. Instead of making the chicken I bought a rotisserie chicken. I cooked the vegetables on the stove top. I followed the directions of making yellow rice but instead of using water I used chicken broth. I did not season the chicken with salt and pepper to taste. I only used seasoning salt. My boyfriend loved the dish. I myself felt it was a bit too salty, but I always complain of that. Next time I will make the yellow rice with half water/half chicken broth.

Creamy Cilantro Chicken with a Kick

I can't believe I made such a delicious dish! My user name is Cooking Impaired for a reason! I have certainly impressed myself! I followed a review and only added 1 TBS of ginger root instead of 2 and it was still wonderful. This recipe is a keeper! It certainly does have a kick!
