Zinfandel Vinaigrette

i used red wine vinegar for this and used it in another pasta salad recipe i found that i needed a red wine dressing for. when i tasted this i thought the basil was a little brave with this and would cut it down next time. other than that solid recipe really and the measurements ( with the exception of the basil) are pretty right on. thanks.

Hope's Colorful Pasta Salad

i didnt have the broccoli but i kept everything else pretty true to the recipe. i dont think i used 2 cups of mayo but i probably used more than 8 oz of the salad dressing. i used a home made version from this site. i like the dry mustard in this. it gives it something extra. it makes alot but i sent some to my mother in law and she called for the recipe. ill try it with broccoli too but i dont see how this could get any better. five stars.

Mom's Best Spaghetti Sauce

i used brown sugar instead of white and 3 teaspoons. i also used fresh tomatoes( plunging them in water and peeling the skins off) from my garden and subbed red bell pepper for the mushrooms since i didnt have any mushrooms and didnt add water since my tomatoes were fresh. kept all the seasonings the same. i simmered this on the stove all day until it became thick. i added ground beef to it for a meatsauce. i know i changed this based on the ingredients i had but the seasonings are the right amounts.

Juicy Watermelon Sorbet

as is three stars. i tasted the mixture before i froze it and as is TOO SWEET. to remedy it and not waste it i added double the watermelon which i just smashed with a potato masher and didnt do the whole food processor step. i just smashed the watermelon ( 8 cups for the amount of simple syrup specified) and kept the lime juice the same and froze it in those popsicle maker things and dixie cups. my daughter loves these and we didnt waste any watermelon. i think this would also work with canteloupe or peaches its a good starting point.

Take-Out Fake-Out Pollo Con Crema

made this for my girls at work. had to sub tomato paste for ketchup and evap milk for heavy cream ( something i learned from the recipe author actually) and this was so good. ive never had the authemtic kind so i cant compare but they loved this and asked for seconds. it served 6 women and 2 staff members with some leftovers. we did actually put some salsa verde on these and some people opted cheddar and sour cream to top them with but i ate mine as is and didnt want to add anything. thank you sarah.

PHILLY Fluffy Mashed Potatoes

as is a three star recipe. they were very thick. i did change the cream cheese portion using philly cooking cream since i had some to use up of the plain variety and its pretty bland so i added 1 tsp garlic powder and a couple of fresh chives from the garden. i noticed i was going to end up with a more gluey mashed potato and remedied it by adding a 1/4 stick of butter and a splash of evaporated milk. seemed to loosen them up some. i like the idea of a cream cheese mashed potato i just think this recipe as written needs some changes. thanks for a good base recipe.

Marinated Tomato Salad

so good! i give my family a salad of some kind with dinner every night. usually im not a fan of raw mushrooms though i do like them cooked. i had a few sliced mushrooms left from the ones i topped steak with and a couple tomatoes from my garden so i decided to try this and im glad i did. i did decrease the oil i only had about a half cup. this is simple and good and looks nice on the plate.

Mexican Cornbread II

ive madde this twice the first time exactly as directed and it was a little too moist. i combatted that tonight using half as much creamed corn ( freezing the other half the can for next time) and it came out way better. i like this because i can play with it some maybe using cheddar since i dont always have monterey jack in the house but always do cheddar. i did sprinkle the tinsiest amount of cayenne over the top before i baked it and i think it gave it a little something it wasnt hot but it was definitely good.

A Little Bit of Everything

made exactly as written and it might have been the beer but it was overly beer flavored. ( if that makes sense) ill make this again and decrease the beer seeing as i had some extra marinade left over so it wouldnt effect the amount. this was also good on the mushrooms that i made to go with the uber cheap steaks we had for dinner. this is a solid marinade recipe and its very simple using what i always have on hand. impressed.

Easy Pizza Sauce I

this is good and simple. to get what i needed i did decrease the water by 1/2 and added a tsp of sugar to cut the acidity. i needed a thicker pizza sauce for my daughter to have ghetto pizza for lunch this week. ghetto pizza= white bread spread with pizza sauce and topped with parm cheese or mozarella and broiled until the cheese melts. this made enough to fill a small jar and cost half what the already made "pizza quick" costs. impressive and easy.

Zucchini Cucumber Salad

Good base recipe. Ive made this twice and Ive used bottled ranch dressing that I had an overabundance of both times. The first time as is its good. When I made this tonight I added in a heavy 1/4 c of shredded red onion. It needs to get cold it says serve immediately.. and you could.. but its better after it has a chance to meld together. My husband asked if this was the cucumber coleslaw like last time and I think that describes it perfect. A shredded carrot or 2 would also be good. I like that this is easily changeable to what comes out of my garden and crisper.

Carne Asada Tacos

5 stars and I had to change it up based on what was in my pantry. I ended up with an extra kiddo tonight and only had 2 small roundsteaks out for dinner. I didnt have the tomatillos so I used canned green chiles. I added a splash of rooster sauce to the marinade because my husband is addicted to it. I served this with cheesy rice and refried beans. Not a bit of this left. I dont think it feeds 6 but its still a solid recipe.

Super BLT

wow killer sandwich. i made my own guacamole and used garlic and chive cream cheese since its what i had. i made this for my husband who prefers a club sandwich to a plain old blt but i was out of turkey. this would be a great pub dinner night sandwich served with fries. ill make it for him again. dont skip the cream cheese it really adds something.

Sassy Steak Marinade and Sauce

very good! i didnt have cocktail sauce so i made my own with a 2/3 cup ketchup 2 tablespoons horseradish and a squeeze of lemon. i didnt have time to marinate but did pour about half over the steaks and mushrooms and let them cook about 10 minutes and served the extra beside the steaks. this really worked with the cheap cut of steaks i used for dinner.

Parmesan Knots

very good way to jaz up canned biscuits. my brood ate an entire batch between dinner and then grazing after dinner. i think id like these with spaghetti when i dont have french bread. i did cut the oil a tad buti dont think it messed with the finished product. definitely ill make these again.

Mommy's Summer Salad

good but not so great ill make it this way every time. definitely an easy side for a hot night but i used frozen peas instead of canned i thought they would be too mushy. i also omitted the ham but added it to the leftovers ( just regular lunchmeat ham) so that my brood could have it for lunch tomorrow.

Bean 'N' Rice Burritos

I had to change this based on what I had. I used refried beans and less sour cream and also shredded cheddar instead of Velveeta. Nornally I wouldnt use a recipe for stuff like this but I thought Id try something new and I did. Everyone liked this alot. I was impressed how fast it came together. Ill make this again.

Taco Seasoning Mix

i ended up making 2 batches of this because the first one was way too salty. i doubled it and omitted the salt on the second batch and it seemed about perfect. I added some smoked paprika but that was the only additional spice. Thanks for the recipe as is though too salty sorry

Cheesy Beans and Rice

i skipped the baking step because its like 80 degrees here but i just added the cheese at the end and let the lid on it melt the cheese. perfect for a soft taco supper and the leftovers made a few burritos for my freezer. I would add some more spice next time but otherwise great!
