Easy Broccoli Quiche

First of all, I think this recipe is made for a DEEP dish pie crust. I had 1 cup of the egg mixture leftover because it was way too much. Secondly, I only had to use 1 C of the mozzarella cheese. My advice would be to either use a deep dish pie crust, or if using a standard crust, cut the liquid ingredients in half (2 eggs, 3/4 c milk, 1/2 tsp salt, and 1/4 tsp pepper). Other than that, it's a great recipe and very tasty!!

Barbecued Meatballs

Very good meatballs and simple to make. I used my food processor to make the breadcrumbs (I had frozen Roman Meal bread which made it alot easier to process). Also used frozen chopped onions and our favorite ready made bbq sauce (SauceKing). I made them larger than the recipe calls for, about 1-1/2"D, and they were still ready in about an hour.

Simple Spinach Lasagna

I used a 9x13 pan and used 9 noodles for three layers. I followed the recipe, except I pre-cooked my noodles and omitted the 1-1/2 cups water. Also sprinkled on additional parmesan cheese to the last layer. Delicious lasagna recipe!

Creamy Au Gratin Potatoes

This recipe called for everything I had on hand. The only change I made was I sprinkled dried chopped onion in between the layers- about a tablespoon. Everything else was the same. I made 6 servings instead of 4 and it only took about an hour. This is a fantastic recipe!

Maria's Pepper Steak

Tried this today and used frozen green peppers instead of fresh. I also sliced eye-of-round steaks into 1" slices and it worked out well. I really like the sauce!

Graham Cracker Crust

Very easy recipe and very good! Another viewer said to use a coffee grinder, but I think that's more work and cleanup. Just put the graham crackers in a food/freezer baggie and pound them down (I used a flat sided metal mallet. It's also a good way to release any anxieties! lol) and then add the sugar and melted butter to it and mix it in the bag. Transfer to the pie plate and press onto the bottom.

Sweet Potato Soup

This is a tasty, easy soup to make. I did alterate a bit - I omitted the turnip (didn't have one), used 1% milk instead of cream and added 2 T additional butter, doubled the brown sugar and cut down considerably on the nutmeg (personal preferance), maybe used 1/4 tsp. I also added some mini marshmallows while the soup was in my bowl and let them melt...mmm,mmm.

Quick and Easy Cheese Bread

This bread has a nice crunch on the outside and is crumbly on the inside. I made it using mild cheddar which didn't give it much flavor- it tasted more like a sweet bread (because of the sugar), so next time I will use a stronger flavored cheese, like sharp cheddar. All-in-all, very good, and easy to prepare. It's a keeper!

Delicious Ham and Potato Soup

Delicious! I would make this again and again! I made a half-recipe using unsalted butter and added only a tad bit more of salt at the end after tasting. Very tasty! Will probably add carrots next time around.

Chicken Stir-Fry

I love the marinade in this recipe. I marinated the chicken but instead of fresh veggies, used a large package of frozen chinese veggies and 1 c. chicken broth. I also used a healthier, light olive oil. It was quick, easy and very tasty! I dabbed a little honey on it before serving - oh, yum!
