Big Ed's Cajun Shrimp Soup
This is my first time making a shrimp soup. This is very simple to prepare. I used what I had in the house- frozen grn peppers, and substituted frozen white onion (about 1/8 c)instead of the green onions. I used chicken stock in place of the clam juice. Also used brown rice and let it simmer for about 35 min instead of 15 minutes. Other than that, I used the remaining ingredients and it turned out very, very tasty. One day I will make this the way it's suppose to be made!

Easy Broccoli Quiche
First of all, I think this recipe is made for a DEEP dish pie crust. I had 1 cup of the egg mixture leftover because it was way too much. Secondly, I only had to use 1 C of the mozzarella cheese. My advice would be to either use a deep dish pie crust, or if using a standard crust, cut the liquid ingredients in half (2 eggs, 3/4 c milk, 1/2 tsp salt, and 1/4 tsp pepper). Other than that, it's a great recipe and very tasty!!

Barbecued Meatballs
Very good meatballs and simple to make. I used my food processor to make the breadcrumbs (I had frozen Roman Meal bread which made it alot easier to process). Also used frozen chopped onions and our favorite ready made bbq sauce (SauceKing). I made them larger than the recipe calls for, about 1-1/2"D, and they were still ready in about an hour.
