Easter Leftovers Frittata

I made this into a serving for one by using 4 oz cooked pasta, 1/2 C leftover fajita peppers and onions, 2 oz fajita chicken, 2 eggs, a handful of baby spinach, and 1 oz Mexican cheese. I started on the stove top in a cast iron pan and finished in the oven under the broiler. It was a great way to combine the leftovers of two meals into a unique third.

Kheer (Rice Pudding)

I wanted a non-dairy pudding that used leftover rice so used: - 2/3 C cooked rice - 1 C coconut milk - 2 T sugar - 1/4 t rose water (which I had on hand; this is optional and certainly an acquired taste) - 1/8 to 1/4 t cardamon (I eyeballed it. Try cinnamon or nutmeg if you don't have cardamon.) - 1/8 C raisins - 1/4 C almonds It was yummy! I will try it cold when the weather warms back up.

Mediterranean Chicken Orzo

This is supposed to be four servings, but we've had four and have at least another four left. The recipe calls for way too much orzo; I had to tweak lots of quantities. One pinch of salt for a pound of pasta??? Not enough pepper, lemon, olive oil, basil, olives, or Parmesan either. I would have added more tomatoes, but since they were so messy to cut (due to being oil packed), added red pepper instead. Next time, I'll use 10 oz of orzo instead of 16, and reduce the chicken. I did enjoy trying the oil-packed sun dried tomatoes, and while I was at it got oil cured olives as well - turns out I like these way more than regular olives. I added green beans because that's what's popping in my garden. I took off a star because the proportions were so far off, but less experienced cooks might want to mentally take off another few stars and be prepared to do a lot of adjusting.

Stovetop Chocolate Coconut Macaroons

I'm glad I just made a half batch, cuz I've eaten half of it already - yum! I was going to add chocolate chips like another reviewer did, but I doubled the cocoa powder and it was plenty chocolatey for me. I added a little more coconut.

Raspberry Brownies

I followed the directions exactly and the brownies came out yummy. I think the problem with the texture that the other reviewer mentioned was due to the step NOT included in the directions - when melting chocolate for brownies, it is imperative that it cools down before mixing in the flour, otherwise it will come out cake-like, instead of brownie-like. I really liked the raspberry, but this was a very fussy recipe, for a brownie recipe. Maybe I will try swirling in the raspberry next time. PS to Smuckers - I used Bonne Maman brand, as it has raspberries as the first ingredient, rather than sugar (Smuckers Organic) and does not contain High Fructose Corn Syrup & Corn Syrup (Smuckers Red Raspberry Preservers)
