This cookie was one of the 6 cookie recipes I selected to make for Christmas this year, and my first attempt at traditional peanut butter cookies. A few pointers - buy no salt peanut butter; this will help to regulate the recipe. I purchased a natural smooth peanut butter ("Teddy" brand) and despite it's good quality I found my results a little too salty, and a little oily tasting. Also, I dipped my cookie dough balls in granulated sugar before baking them, and I think this may have been their saving grace. Without that, they certainly would have been too salty and not sweet enough. I added slightly less salt and slightly less vanilla than the recipe called for. I will probably not use this recipe again, however I realize a huge part of making peanut butter cookies is the peanut butter you use, so perhaps I will give it one more chance with a different brand of no-salt peanut butter.
