This a good caramel apple pie, not great. I make a much tastier caramel sauce which, in my opinion, should include vanilla. Also, it was a bit too much sauce which probably cause some reviewers' pies to be runny. Also, 8 apples is just way too much, 5-6 average apples is plenty. If you use a lattice crust, pour most of the sauce onto the apples, stir, then place in the crust. Save a little bit to brush on the crust if desire. Pouring over the lattice will guarantee that the sauce sits on top and you will have unevenly coated apples. As for adding spices, that is individual taste. I do like cinnamon in my apple pie.
