Poor Man's Cookies

My mother used to make these all the time when we were kids, & now I include a batch with every Christmas goody bag so I can share a part of her with her grandchildren. Took forever to find the recipe, so thanks! Also, a side note...you can vary the chewy/crunchy consistency by baking shorter/longer times. I love the way the brown sugar caramelizes in these, takes me way back...and yummy!

Pork Chops to Live For

Recipe was easy and flavorful, but I had thawed my chops long b4 I realized I didnt have cream of mushroom soup, so it was either substitute with cream of chicken, or try it in the oven....so I waited for my hubby to bring my car home from work and got the right soup...baked at 350 for about an hour, and was great. Had 4 chops leftover and gonna try today in slow cooker, hope they turn out a little more tender and a little juicier. You really can only get that from slow cooking! Other than that, it still tasted great. Will definitely make again, and I'll be showing it to my mother, who only believed in Shake-N-Bake!

Zucchini Bread II

just tried a recipe just like this from an aunt, minus the raisins, and it was excellent. Just wanted to spice it up a bit next time, so thanks to another reviewer for suggesting the allspice or nutmeg, and substituting applesauce for oil, which i usually do, but this was a new recipe. Also wanted to add that i did not peel my zuccini, just chopped the ends off and ran it through the food processor and froze until ready for use. The peeling wasnt noticeable in taste, or texture believe it or not (was shredded very fine), but it DID show up and gave an interesting visual effect. Tasted alot like banana nut bread, and we'll be making this year after gardening year. THNX!

Sauteed Apples

My grandmother used to make "fried apples" as part of her huge buffet breakfasts everytime I went to visit her in KY (such a fond memory) and they were the best thing I had ever eaten. Until now I had no idea how to offer this to my family short of opening a can of pie filling and throwing in a skillet! Thanks sooo much for putting me back in touch with some of "My old Kentucky home". Cant wait to get my family hooked on these! ***Update---decided to make these for my brothers for Thanksgiving, just wanted to note that simmering in butter is an important step, I had to make mine in two batches, and forgot to simmer the second set...took forever to get soft. Aside from that though, awesome recipe!!! PS May want to adjust cornstarch to adjust thickness depending on apples used, I used Gala cuz thats what was here...also plan on freezing these until I need them, will let you all know how well that turns out...I sure do hope they freeze nicely.
