Easy Pumpkin Muffins

I can't believe how good these turned out. They puffed up like those fancy muffins sold at the deli. I used fresh pumpkin, doubled the spices and added pecans in the batter and did a brown sugar topping.

Eclair Cake

This dessert is way toooooo sweet. Not to mention that the graham crackers get very soggy, and it seems as if you're only eating pudding with chocolate.

Minestrone Soup I

I swapped cabbage for spinach. Didn't have celery so I used broccoli and some cauliflower. I also included some vegetable broth, and used whole wheat rotini pasta. Delicious! Next time I'll add shredded chicken.

Oatmeal Whole Wheat Quick Bread

I doubled the recipe, added 1/2 tsp baking soda, 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp vanilla, raisins, pecans and baked it in a loaf pan. The whole house smelled heavenly. And it was a looker! But it was pretty bland. I'm baking another tonight but will add 3/4 cup splenda. I'll let you know how it turns out. ( ps baked 350 for 1hr).

Pumpkin Cake II

I only used 3/4 cup oil, and it was plenty. 2 tsps pumpkin pie spice, fresh pumpkin, and pecans instead of walnuts. It didn't taste like pumpkin at all more like moist pecan cake.

Whole Wheat Pumpkin-Applesauce Muffins

After reading some of the reviews, I used only 1/2 tsp salt, 2 1/2 tsp pumpkin spice, no white sugar, no oil and 1 cup pumpkin. I prepared it in a loaf pan and was ready in 43 min ( I used my toaster oven). It smelled and looked wonderful, but it was so tough! I was disappointed (to say the least). So I double wrapped it in plastic wrap and left it overnight. This morning I unwrapped it and tore of a chunk, it was so moist and delicious! Perfect pumpkin taste. I will bake many and give out in gift baskets.

Simple Scones

I prepared mine in the food processor, it was easy and quick. I did the orange cranberry variation. I did an egg wash, and on some I drizzled some icing that I prepared with powdered sugar and freshly squeezed orange juice. Fabulous, this one will replace my old recipe.

Chicken Pot Pie III

I prepared this last night. I boiled the chicken in chicken broth and added a little poultry seasoning, onion powder, and garlic salt. I added a bag of frozen par boiled stew vegetables (carrots, potatoes, celery, and onions) and half a can of peas. Everything went in with the chicken to pick up the flavors. I also used an egg wash on the crust. Next time I'll add about a 1/4 cup of the cooking liquid to the soups before mixing it with everything else, just cuz I like it a bit creamier. Wonderful Recipe!! I can't wait to eat the leftovers tonight!

No-Noodle Zucchini Lasagna

I prepared this last night. The sauce was delicious, and I can't say that I missed the noodles. But there is a few problems. Some of the zucchini pieces weren't cook through, and maybe this was due to that it was really hard to get them really thin. Also, even though I didn't add the water it was still super juicy. This made it difficult to serve.

Flourless Peanut Butter Cookies

Maybe I shouldn't have modified the recipe (added vanilla, splenda, and baking soda), because no one in my house liked them. They claimed that is was like eating sand. I'm on low carb, so for me they were better than nothing!!

Hawaiian Banana Nut Bread

This recipe only needs 1 cup sugar and 1/2 cup cherries. It was waaay to sweet, even for me! I omitted the cinnamon, because I don't like the taste of cherries and cinnamon together. Other than that, it was great.
