Carrot Cake III

Reviewed: Apr. 22, 2013
I have made this several times with great results. I used the changes in the "Most Helpful Positve Review". That would be: using 1 cup brown sugar and 1 cup white sugar 2) adding an extra teaspoon of vanilla extract 3) adding 1 8oz. can of crushed pineapple (I squeezed out most of the juice before adding it, I didn't want any extra fluids in the cake) 4) Added 1/4 teaspoon of nutmeg 5) added 1 extra teaspoon of cinnamon 6) used 3/4 cup canola oil and 1/2 cup applesauce. For the frosting, I only used 3.5 cups of powdered sugar, and it was more than sweet enough, with a nicely balanced cream cheese vs. sweet flavor. I also omitted the pecans from the frosting. My husband said this is the best cake he has ever eaten.

White Chili with Ground Turkey

Reviewed: Mar. 11, 2012
This was not good. I made exactly per recipe- maybe the cinnamon gave it a funny taste. Also texture was runny and meaty. Not at all appetizing.

Burrito Pie

Reviewed: Jan. 16, 2012
I think that this recipe was really good. My husband kept saying this is good and eating more! A few changes based on comments on the site. Added 1 package of taco seasoning to the meat. Next time I will use turkey instead. Used regular diced tomatoes - 14 oz can. Used salsa instead of taco sause- I'd recommend mild salsa. I used medium and that gives quite a kick. Used 1 can refried beans and 1 can hot chili beans. spread the refried beans on the tortillas and then layered the beans with the meat and cheese. Used whole wheat tortillas, low fat cheddar cheese. After cooking I put sliced avacado, shredded lettuce and some non-fat sour cream on top . The toppings add a lot in my opinion so don't omit. The other issue I had was that it seemed like there was too much liquid so I drained some off. DON't DO THAT! You will need it as the liquid gets absorbed into the tortillas. This makes two 11x 7 ( 2 quart ) casseroles. Freeze one and enjoy later! I will definately make this again!

World's Best Lasagna

Reviewed: Feb. 5, 2010
This was excellent. Used hot Italian sausage instead of sweet but otherwise no changes. This was worthy of serving to company ( which I did not do yet). Very flavorful and delicious.

Made this for Christmas dinner. A huge hit. Used Jimmy Dean sage sausage instead of turkey. Added 1 egg and a little extra low salt chicken stock. Ued fresh herbs and a granny smith apple. Absolutely excellent- made 10 servings for 7 people and they ate all of it! We will have this again for sure.

I made this and served to guests for a special dinner last night. They all agreed that it was fantastic. My daughter said it was the best salmon ever. My husband said it was " like butta" . We all recommend highly. Its easy to make and prepare. I followed the recipe with no changes. I will certainly make this again.
