Marinated Grilled Shrimp

Made this as written with 50% more cayenne as noted by other reviewers. I used a bit less salt. Everyone loved it grilled. The most important part is not over cooking it. I grilled my shrimp on a medium heat for 3 minutes a side and texted it by poking them for doneness. Then did some an extra minute.

Penne with Ham, Mushrooms and Peas

The whole family really enjoyed this (because I left out the parsley for my son.) The smoked cheddar gives good depth to the flavor that regular cheddar would not have. To reduce the amount of fat, replace 1 cup of cream with 1 cup of home-made stock and 4 tsp of flour. This produces a nice creamy finish on the pasta without the heaviness. I also had honey- baked ham too. Wow!

Grilled Salmon Steaks with Savory Blueberry Sauce

Please consider simply grilling a nice piece of salmon with simple salt, pepper, lemon and olive oil over this recipe. It really overpowers the salmon flavor. The sauce is just not interesting enough to justify replacing the salmon flavor. No one in the family liked it.

BBQ Pork for Sandwiches

My hard to please son and 8 others enjoyed this. Some went back for seconds without the bread. I used an inexpensive 3.75 lb. pork butt, garlic and 1 cup of broth which was plenty. I could probably just use 1/2 cup or even water. For a mixed age group, I needed 6oz. of raw pork butt/person. I used a great, Hawaiian-style sauce Kona Coast Tropical Sweet 'n Spicy. Cook it on low for 8 hours at which time it will shred easily. Drain most if not all of the liquid and save it as stock. Add some sauce and oven cook it to dry it for sandwiches so the bread doesn't get soggy. Serve some sauce on the side for those who want extra!

Brazilian Black Bean Stew

Great combination of flavors. Even my picky eater ate it. It looks great to just serve with the mango and then cilantro sprinkled on top. I used turkey chorizo to cut the fat and didn't add any salt at the end.
