Baked Ziti IV
We make this routinely to feed large crowds, i.e. teenagers (24+), company, or family event, and we get great feedback. Improvements: replace cottage cheese with Philadelphia cream cheese. If you like a bit more seasoning, put in 2 teaspoons (instead of 1) of fresh rosemary and fresh oregano along with some basil, garlic and black pepper. For large groups, this scales up easily, but allow extra cook time! We make a double recipe in a 11”x17” pan and leave the final layer of cheese off the top and cover it with foil and cook it for 30 minutes and then take the foil off, sprinkle with cheese and cook it for another 30 minutes. Consider making separate dishes with no dairy for those who are lactose intolerant or no meat for vegetarians, but smaller pans won’t need the whole hour of cook time. If you store it in the refrigerator before cooking it, add another 15-30 minutes of cook time depending on pan size.

Grilled Soy-Sesame Asparagus
Great side dish with Grilled Mongolian Pork Chops! I’ve made this a several times now because of family requests. If you like a little char on your grilled vegetables, follow the recipe. I now microwave the asparagus first in the marinade on high for a minute and then finish them on the grill. Once in a hurry, I left out the brown sugar and it was fine that way too. Note that toasted sesame seed oil has a distinctive taste and is a key flavor to this recipe.

Grilled Mongolian Pork Chops
Excellent pork marinade! I've made it 3 times and got compliments each time. Since hoisin sauce’s ingredient list starts with sugar and water, I leave out adding the white sugar. You don’t need it. I didn't have sherry vinegar, so I just used half that amount of sherry. I use a vacuum dish to allow the marinade to really penetrate for hours, check out a FoodSaver Quick Marinator. I then slow cook the pork chops (don’t dry them out). Wow! The chops are great just like that. The mustard sauce isn’t worth the extra effort in my mind, but I’m not big on sauces when the meat is so great. Serve this with Grilled Soy-Sesame Asparagus.
