To Die For Blueberry Muffins
~ GLUTEN-FREE ~ This recipe can be gluten-free, healthy & delicious! It took some experimenting, but here is how to do it - 1 1/4 c packed gluten free flour mix (your favorite flour blend for baking) 3/4 c white sugar 1/2 t salt 2 t baking powder 1/3 c vegetable oil (substitute half with applesauce for less fat) 1 egg 1/3 c milk (dairy, soy, or rice milk) 1 c fresh blueberries make as directed, using muffin cups to prevent sticking; check after 18 minutes - they may be ready if using frozen blueberries, reduce temp to 325 degrees and bake for 25-28 minutes. Yum!
