Muenster Chicken and Mushrooms

Chicken Cordon Bleu II

This was extremely juicy, wonderful chicken. I actually did not put the ham and cheese inside the chicken. I floured the chicken and fried it in the butter, then added the wine and bouillon. While the chicken was simmering, I added the ham and cheese on top. Worked out great and couldn't tell a difference in the taste. YUM!!

Kheer (Rice Pudding)

Very good traditional rice pudding. I ended up simmering for 50 minutes on low heat and adding 1/2 cup more milk from too much thickening. If I were to make this again I would use a bit less cardamom and would let the almonds soften a bit with the raisins. Best served cold. Overall, great recipe!

Flourless Peanut Butter Cookies

These cookies are very good as written but really easy to overcook. The peanut butter burns very easily in the oven, especially on the bottom, so be careful to watch them when close to finished. Definitely have a strong peanut-buttery taste.

Apricot Lentil Soup

Really good flavor! Used a can of diced tomatoes, 2 cups of green lentils (8oz bag), double cumin, and 2 more cups of broth. Also did not puree at the end. Definitely will try next time paired with brown rice.

I used turkey sausage instead of beef and ricotta cheese instead of cottage cheese. Also, cooked a half hour and let sit overnight then cooked the 15 minutes. This recipe was amazing!

Potato Arugula Salad

I loved the olive oil and vinegar mix that goes on the potato and arugula mix. Would make a great salad dressing. I used small potato cubes (about a 1/4 - 1/2 inch) and the potatoes were too soft in 15 minutes. Will make again!

Lentil Soup III

Great soup! Easy and healthy as long as salt is kept to a minimum. I used 3 cloves garlic, 1 1/2 tablespoon cumin, and a shake of curry. Also sauteed onion and garlic for a few minutes in olive oil before adding to the soup. Yum!

Grilled Hot Turkey Sandwiches

Surprisingly GREAT. My boyfriend and I both loved it. I did use white onion rather than green and also added a little too much sauce. When cooking only barely coat the bread with sauce and it will be plenty. Definitely making again!
