I rated this 5 stars because even though I added some things to it the recipe was still a great base. My husband I absolutely loved it. I soaked the chicken breast in a water/kosher salt/sugar brine for 2 hours beforehand. I added sauted jalapeño, onion and garlic cloves to the stuffing. I also added extra feta plus mozzarella and parmasan cheese. Some seasonings were thrown in too. Like Some other users I cooked the bacon partially before wrapping. Once the chicken breast were stuffed and bacon wrapped I squeezed fresh lemon juice over the top of each so the seasoning would stick. On top I sprinkled Tony's creole seasoning, salt & pepper. This turned out so great. The only thing I'll change the next time I make this is the season the whole chicken breast at the beginning instead of just at the end. I found when biting into just chicken it was too plain. Great recipe!
