Slow Cooker Carolina BBQ

I thought that I had found my all time best pulled pork recipe when I last reviewed slow cooker pulled pork with root beer. This one has bumped it into second place. I used a boston butt a little under 5 lbs. Didn't have any cayenne so I used chipotle instead- figured it would add a little smoky taste to the mix. Also used a couple of tbls of liquid smoke. plus a little more brown sugar cause I put all of the spices into the cider vinegar up front and when I reread the directions realized my error. Any way adding a little more brown sugar and liquid smoke when I was putting shredded pork back in crock pot seemed to be just right. Cooked the pork 8 hours before it was coming off the bone correctly and then 2 more after shredding. This was so moist and flavorful with just the right amount of kick[used about 3 tbls of Louisiana hot sauce and 2 cups of sweet baby rays bbq.

Honey Butter

Wow. So easy and so tasty. I softened butter in microwave at 40% power for 10 seconds on 2 sides: total 20 seconds. Used a stick blender and the chopping blade/container for about 30 seconds. Had to scrape down sides and then pulsed for a few seconds a couple to times. Came out creamy and delicious on warm home made bread.

Baked Pork Chops I

I thought that I had everything on hand for this recipe but found out that I was missing mushrooms as well as mushroom soup---so I improvised. Instead of olive oil I fried the chops in bacon grease left from breakfast which browned them quite nicely. For the soup I used cream of celery and used white Zinfandel [Arbor Mist]. The chops were 'dissolve in your mouth tender' and the sauce was a delight to the taste buds.

Slow Cooker Pulled Pork

WOW-nothing could be easier to put together. I just rubbed in some salt and pepper and threw a boneless pork loin into the crockpot with a can of A&W. Decided to make homemade BBQ Sauce instead of store bought. I used the recipe from "Texas ribs" for the sauce. Tasted the pork after shredding it before adding the sauce and almost decided to eat it that way, it was so tasty. Added southern sweet coleslaw and mashed potatoes for the sides--YUM YUM!

Creamy Potato Soup

Easy to make. Used smoked paprika and 1/2 tap celery salt since I didn't have celery on hand. Great smoky Bacon flavor. My wife who isn't a potato afficienado, made a point of letting me know she'd like this again!
