I found this recipe by putting in the ingredients search "zucchini, squash, potatoes" and this is what came up! I made this recipe mostly as written (and used the Harissa sauce recipe from allrecipes). First, I cooked the harissa sauce with the veggies (I added some onion) and instead of cutting it all up, I put the egg over the vegetables and wrapped up in a tortilla (I read somewhere that they served in a pita, but a tortilla was what I had on hand). Also, I omitted the chili peppers and dashed some cayenne and chili powder because my 2 year old was eating, too. It was SUPER yummy and my husband liked it too. My 2 year old wasn't a fan, but he's picky. So healthy!

Harissa

This was great! I'm sure doing it "as is" is even better but I had to omit the mint because I didn't have any. Also, I used some chili powder and cayenne powder because I didn't have chilis either. As the sauce was sitting on my counter waiting to be used, the smell was immaculate!

This was really yummy and so simple! I didn't have the fat or the roasted chicken broth but similar substitutions and it turned out excellent. I'm sure it would have been even better making it exact.

Asian Ginger Dressing

This is really good. I didn't have fresh ginger so I used ginger powder. Also, I added sesame oil in place of a 1/4 cup of olive oil. It was great with mandarin oranges and chinese noodles (and lettuce of course).

This is a nice basic recipe, but you have to decrease the amount of tortillas and add more seasonings and veggies to make it a super tasty dish. My husband and 1 year old ate it up! (After adding some cumin, garlic, onion, and salsa. I only used 6 tortillas and that was plenty.)

Vegetarian Mexican Inspired Stuffed Peppers

Tasty and Easy! I made a few of substitutions, but stuck with the same basic recipe. 1) Instead of boiling, after cutting the peppers, I put them in the toaster oven on 'bake' at 250ish degrees for 10 minutes. They turned out so perfect. 2) I didn't have chili-style tomatoes, so I diced up some cherry tomatoes and added a little salsa 3) instead of garlic salt, used granulated garlic and added a little extra salt 4) used Yellow peppers which gave a wonderful sweet taste. I don't really like green peppers so this was a great substitution. 5) instead of rice, used Quinoa for extra protein. Some of the quinoa actually tasted like ground beef after baking. My Husband was impressed with this recipe and I've tried several other stuffed pepper recipes where he would shrug and say "it's, okay" but this was he said, "Wow, this is actually good!" Thanks for the recipe! Will definitely do again!

This is great! Perfect crust and nicely dense but fluffy inside. I used all purpose flour and olive oil and it turned out fantastic on the rapid setting!

Thai Pineapple Chicken Curry

Perfect. I prepared it a little different in that I left it cooking on low for about an hour on the stove (like a slow cooker). Added the second can of coconut milk after the hour. Simple, flavorful, and delicious! Served with basmati rice and fresh napa cabbage!

Cream of Chicken and Potato Soup

Put everything in crockpot without the floured first ingredients. Added cream at end (but only 1 cup). Added 2 cans corn, 3 can green beans.

Grandma's Corn Chowder

I have made this recipe numerous times and it comes out great every time. For the most part, I follow the recipe but I don't love to measure cups so I put in a whole package of bacon, two cans of chicken broth, two cans of cream corn, one can of sweet whole kernel corn (undrained). Sometimes I'll sub the 1/2 and 1/2 with 2% and sometimes I'll sub the bacon with deli turkey, just depends on what I have on hand! It turns out fabulous every time!!!!
