Easy Mexican Casserole

I loved this dish. Followed suggestions about taco seasoning (I added about 1/3 packet), Rotel canned tomatoes (I used the ones with added mild chilis), less chips (1 1/2 cup is plenty), and packaged Mexican blend shredded cheese. I do think it is very important what kind of salsa you select. I used Santa Barbara Mango Peach Salsa by Sabra--in the refrigerated section of the supermarket. Lovely fruity flavor with just a pinch of a kick. This dish as described is perfect for those liking a mild version. Do prepare meat mixture ahead of time so seasoning can be absorbed and drain grease from hamburger before mixing.

Joy's Prizewinning Trifle

What a beautiful and flavorful light dessert! I did take the advice of others and made the vanilla pudding mix into pudding with about 1 c of half and half mixed with 1 c non-fat milk. (This was with the larger box of pudding mix, so I just used about 2/3 of the pudding.) I think once you get the consistency of the pudding the way you like it, the recipe is pretty foolproof, although I did follow the rest of her directions. I cut 3 horizontal pieces of the cake horizontally, but did score them into smaller pieces as I thought they might be easier to eat that way. Anyway, it was yummy and got rave reviews!

Chicken With Mushrooms

Reading the reviews, I made a few changes and it was delicious! I used no eggs, bread crumbs, or chicken broth. I sauted some onion, garlic, and a minced zucchini in the butter. Added the mushrooms about half way through. As they began to cook down, I added some red wine. When all cooked down, I removed the veggie mixture to a bowl. Browned the chicken in the drippings & may have added a bit more butter. Removed and layered veggie mix, chicken, more veggie mix and topped with the sliced mozzarella cheese. I then baked this in a 12" square Corning Ware casserole dish for about 25 minutes. I served this over arborio rice. Excellent also as leftovers with the rice mixed in with the veggie sauce. Yum!

Cranberry Pecan Bars

These are the best things I have baked in a long time! With my oven I had to increase both of the baking times, but when they were done, they were moist and absolutely delicious. Next time I will try to chop the nuts and cranberries in the food processor to cut down the time on that labor intensive task. I did use fresh cranberries and they were perfect!

Enchiladas Verdes

Like most everyone else, I loved the flavor of the sauce. I followed the directions as stated, but want to try putting them in the oven for a bit after assembled as they cooled off in temperature quickly after the addition of the crema and cheese. Did anyone else have this problem?

Spicy Mango Sweet Potato Chicken

I loved this dish. A couple of minor changes I made. I peeled and cubed the potatoes, then put them in microwave cooking bag and cooked for 3-4 minutes. This gave them a nice texture and intensified the flavor. I broiled the chicken breasts, let them sit, then sliced into bit-size pieces. These were the last item to be added as I hate over-cooked chicken. Everything else was followed as stated, except I added very little hot sauce as "mild" is my heat of choice:) A great easy recipe that I will definitely cook again.

Chocolate Chocolate Chip Nut Muffins

I sort of liked the hard exterior crust on the muffin, but the interior was close to dry on the first day. On the second day the whole thing seemed to dry out. I will try 1 more time and add applesauce or more liquid of some kind.

Honey Bran Muffins

These are way too sweet for me. I think it's the pineapple juice; might be better with apple juice or even orange juice. I was really confused about what type of cereal was specified. I ended up with Post spoon size shredded wheat n bran; this created interesting little pillows in the muffins. I probably should have cut up the pillows--it might have helped cut the too sweet taste. If I make again, I will also reduce the amount of honey.

Simple Peanut Squash

I used the cubed squash sold in a plastic box at Cosco. Couldn't imagine cubing a whole squash myself! I put the cubes in a small roaster and added a touch of cinnamon to the recipe. I cooked it 45 min & it came out browner than the picture, fully cooked and sitting in liquid that could have been thickened if desired. I also added a spot of low sugar apricot preserves to top it off on my plate. I love the simplicity & flavor of this recipe!

Orange Herb Roasted Chicken

This chicken turned out to be a mess for me! It almost seemed to be boiling in the broth; never did turn brown & crispy on the outside like I like it. Furtermore, the skin tore when I was putting the butter pieces in it so all ended up in the broth. I overcooked it at close to 2 hrs just trying to get it brown and done. The flavor was OK, but I'm so glad I didn't have any guests the night this was served!

Quick Quiche

Best recipe yet from your site! What a hit at the potluck! My changes to the recipe included: I used half Swiss and half English Coastal Chedder, sauted the onions & about 1/4 cup of a red pepper sliced in small ribbons--added cooked broccoli from the night before. I spread these ingredients in a layer over the bacon & cheese as someone said their ingredients migrated to the edges. I used no salt. Recipe cooked in exactly 35 minutes. I decorated top with a sprig of fresh basil. Thanks for an easy, versatile recipe that tastes delicious! Marcie Hines

Soft Oatmeal Cookies

I agree with the reviewer who stated they were not moist; mine weren't either. Also I found them way too sweet. I made the cookies the way the recipe says & added the raisins. If I were to use this recipe again, I would radically cut the amount of sugar. I will say the person I made them for asked for soft cookies & they did come out soft, although he indicated the flavor was nothing special.

Cheesy Zucchini Casserole

OK--recipe called for too much salt for my taste. Cooked without salt the second time, it still has a fainty salty taste--maybe from the cheese. Seasonings are not quite right.
