Taco Casserole

I liked it, hubby hated it. Made as written with the exception of adding green bell pepper to the mix. If I make it again, next time I would add cheese INTO the meat/sauce mix to make it ooey gooey and top with chips AFTER it comes out of the oven. Added a splash of taco sauce to my own plate - I thought it was decent and easy.

Vegan Black Bean Soup

The shocking part to me was how amazing this tasted! Been working thru a series of vegan recipes and this was the first one that was truly tasty. Only change I made was to cut back the black beans by one can (using 3 instead of 4) - was a huge hit in a house of three meat and potato men and myself. Will DEFINITELY be making again, and again, and again.

Slow Cooker Buffalo Chicken Sandwiches

Really, really, REALLY GOOD! This is our favorite NFL Sunday meal - served on mini toasted kaiser rolls with sides of celery and carrots, they make the perfect finger food combo.

Double Tomato Bruschetta

Turns out I don't know how to use a broiler and burned half my bread. That's not the recipe's fault, however. Very yummy, incredibly easy - just a tad bit too tomato-ey fpr me. Will cut down to four tomatoes for next time and use a loaf of French bread instead of a baguette (we were doing this more dinner style than appetizer). The balsamic gives it a nice little tang and the FRESH basil is absolutely CRUCIAL as it makes it taste so... well... fresh! Really good recipe, will definitely make again.

Stir-Fried Vegetables

Easy and so tasty - served over white rice, it's always a massive hit. As I have been trying to get DH to eat less meat, I am always searching for new veggie focused recipes. This one fits my search perfectly! Snow peas also taste great in it.

Chicken Fried Chicken

I was afraid of the instant potatoes, as I can't stand them, but they are there just for texture. I tweaked this recipe quite a bit, adding 1 tsp each of parsley, seasoned salt, garlic powder and about 1/2 tsp of paprika. I dipped each piece in flour, then egg mixture, then crumb mixture. BAKED in oven at 350 for almost an hour, turning once. It's a personal thing, I can't stand the mess of frying, and don't make enough fried foods to warrant buying a deep fryer. Came out really tasty and moist! Will make again, using fewer crackers.

Slow Cooker Pulled Pork

So simple! Hubby is in love with it, and was requesting it for Superbowl Sunday while still chewing. I used a 2.5 lb pork shoulder, store brand "old fashioned" cane syrup based root beer, cooked on low for almost nine hours. Drained, shredded it, put it back in the slow cooker for another hour with Sticky Fingers Memphis style bbq sauce. Served it on lightly toasted Kaiser rolls with a side of home made potato salad. AMAZING! This will definitely be made again... and again... and again...
