Chocolate Date Cake I

This is an old recipe and the first recipe I ever wrote down. I think I was 15. This cake is made for a smaller cake pan. I always have used a 9x9 to keep this from drying out. I always pour the boiling water over dates and baking soda and let it sit for 1/2 hour as I get everything else together. I think it is unnecessary to separate and mix like you do for most cakes. this is a snack cake and not a fancy cake. I have never added nuts. I sprinkle the top with chocolate chips and then white sugar. The sugar caramelizes and makes a kind of crust along with the melted chocolate. Best the day it's made. By the way my recipe was written over 50 years ago from a friends mom. I think it must be watched closely after 40 minutes

I used more apples and more cinnamon but about the same amount of sugar. My apples were pretty sweet so I think you probably need to adjust depending on the type of apple. My Honeycrisps were pretty sweet. I used some seconds and made and canned another batch that I ddn't put any sugar in. I like the chunkier style you get when you make your own

Mom's Zucchini Bread

Great bread, easy recipe. To make it easy I grated all the zucchini in the attachment on my Kitchen Aide. Made the grating very easy. Gave lots away and everyone loved it

Asparagus Casserole

Easy, delish, everyone loved it. I bought canned shrimp and ended up using some frozen shrimp. Next time no tails on. I'd like to try with fresh asparagus too.

All-Day Apple Butter

I like a lot more spice in my apple butter so I kept adding cinnamon and cloves. I also added a little allspice and nutmeg. I found this took about 17 hours to reduce and I had to leave the lid of to have the butter reduce. Maybe my apples were more juicy. I canned this and only got 2 1/5 pts after all this time. It was still easier than on top of the stove. You are always stirring on the stove
