I'm married to my high school sweetheart and we have 2 grown children ages 25 & 26 yrs. old I have to grand daughters now and a grand son on the way. We own a concrete business but I'm a stay at home wife & cook and I love it! :)
My favorite things to cook
My favorite things to cook is anything southern, like comfort foods. Homemade mac n cheese is one of my specialties among tons of other comfort foods.
My favorite family cooking traditions
One sunday out of the month I have my kids come over and bring with them whatever FRESH leftovers they have in their fridge. Then we throw it altogether to see what yummy dish we can come up with. Always fun but not always good. hahaha.. we enjoy it anyway. :)
My cooking tragedies
I was uber rushed on night and had to make the pork chops that I laid out a day or so ago so they had to be made as to not go bad. I had nothing..nada, zip, in the way of spices, etc. I however did have a box of Shake N Bake BBQ for chops. That was sooooo gross and chalky and embarrassing. Hahahaha..who messes that up?? By the way that was when I was in my very early 20's. I've never used boxed 'cooking' help EVER again.

Cheesecake Cupcakes
Very good as is! I add our favorite Jams/Jellies on top with generous dallops. Try blackberry and marmalade for ideas. Scrumptious!

Jen's Heavenly Egg Salad
I didn't have dijion mustard so I used reg. yellow mustard and I didn't have lemon juice so I used a tsp. of white vinegar to add the tartness (which the mustard does also.) I also added 1 tsp. dill relish well drained and 1 tsp. well drained sweet relish. Then I used chopped chives to add color, texture and wonderful taste! I think this recipe is a great base but really needs 'punched' up! :) I also think 1/2 lemon juiced is going to be too much liquid and make it runny as some people have stated. If you can use fresh ground black pepper do so, it really makes it great as an ending flavor. Enjoy. MM

French Toast Casserole
I made this for a sunday brunch and I didn't change a thing EXCEPT, I threw in a couple handfuls of walnuts....I say handfuls because I didn't measure them I just tossed some left over walnuts I had, into the mix...scrumptous! OH and I do rec. leaving out a few pieces of white bread from a loaf to 'stale' and harden up some the night before or use texas toast style...no soggies here! I'll make this again and again and again.... Enjoy! MM
