Delicious Ham and Potato Soup

SO DELICIOUS. I made this with some of a leftover ham - so much better than the processed store-bought hams! I added more onion (because I love onion). I also added some garlic in with the butter mixture. Be sure to start the butter mixture about the same time as starting the vegetables; if you wait to long then your veggies will get soggy while you wait for the butter mix to thicken. I also used Light I Can't Believe It's Not Butter (I couldn't believe I was completely out of anything else!) but it still tasted great! This recipe is definitely a winner.

Egg-White Crepes

This was absolutely FANTASTIC!! I added a dash of vanilla and cut down on the oil (I think next time I'll try it without!) and they were amazing! They tasted a little different than normal crepes - but it was a better, richer flavor from the whole wheat flour. These were a relatively guilt free breakfast for me and I will be making them again!!

Sweet and Sour Pork III

So good! I made it with chicken because that's what we had on hand, and it was delicious! I also just threw in a bunch of veggies I had in the fridge. I made 1 1/2 of the sauce recipe and it was perfect. I would definitely recommend waiting until later to add the sauce to the veggies so they don't get too mushy. Yum!

Spinach Pie V

This was pretty good - it was a little bland for my taste, but the rest of my family loved it! My only issue was that the pastry cracked while baking and the filling spilled out, so be careful about that! otherwise it was a great recipe.

Best Ever Banana Bread

I followed the recipe pretty exactly - I only added a dash of vanilla and a bit of cinnamon - but for some reason it came out too salty. I had doubled checked myself when making the bread, so I don't think it was an error of adding too much salt on my part. I also double checked my flour to make sure I didn't accidentally buy self-rising (which has salt added), and it was all-purpose. I'm sure what caused my bread to have such a salty tang to it, but this is definitely not my new favorite recipe.

Oatmeal Pie IV

Fantastic flavor! I used 4 egg whites instead of two whole eggs, and I decreased the amount of corn syrup to about 1/2 a cup. I also used margarine instead of butter. It was fantastic! The baking time is not accurate on the recipe; mine took close to an hour to get done. I used two mini-pans instead of one 9 inch pan but they still baked well. Delicious recipe - all my friends loved it!

Basic Crepes

I love these crepes, and my friends and family love them! I add a bit of vanilla (probably about 3/4 of a tsp...I just eyeball it) and about probably 1/8 of a cup of powdered sugar. I found that when I found the directions and mixed the flour and eggs first, it was very lumpy, so I just dump everything into a bowl and use a wire whisk. There are still some lumps, but it's still delicious! I really recommend this recipe, it's fabulous!
