Flatlander Chili
Hubby made this the other day and it was FANTASTIC. Hubby used ground chicken breast to lower the fat content and left OUT the sugar (we don't like sweet chili) and it turned out EXCELLENT. He did add a little chipotle seasoning, also for taste. The only thing I think we may try next time is to add some crushed or canned tomatoes. Definitely not necessary, but would have been delish too! :) Excellent recipe as is- THANKS! :)

Homemade Chicken Cacciatore, Sicilian-Style
Made this tonight and it was excellent! Used frozen boneless/skinless chicken breasts and just added them to the sauted garlic & onions. Added spices, then liquids. Used 1 cup of beef stock, 1 can of chicken stock and 1 cup of wine for the liquid. Also used LOTS of fresh chopped garlic, but then again there is no such thing as 'too much garlic' in our family. Cooked the chicken most of the way, then added 1 red bellpepper and 2 small zuchinis. Excellent way to sneak in extra veggies. ;-) Will definitely make again. Hubby asked me to put it on the menu to make at least monthly. :-) 5 stars from my family!

Slow Cooker Honey Garlic Chicken
Made this tonight using frozen thighs with two substitutions : 1 small can of pineapple juice instead of pineapple pieces and with 1 tsp of ginger powder instead of fresh ginger. And I used 6 cloves of crushed garlic. (yumm!) Served over rice. I thought it was very, very good - the meat was VERY tender (fall of the bone) and very flavorful. Hubby said he'd give it 3.5 stars because most of the flavor was in the skin, not the meat itself. Next time I make this I will make it the same way I did this time, however I'll take the skin off before cooking so the flavors can penetrate the thighs. The only thing I may add next time is some crushed red pepper flakes (we loves spice!) to the sauce. Overall, I give it a very good rating. :) Yummm.. adding this to the monthly rotation. :) OH - BE AWARE THE FINAL SAUCE TASTES DIFFERENT BEFORE IT IS COOKED AND THE FLAVORS HAVE A CHANCE TO MARRY. I wasn't really sure about the sauce, but after it cooked excellent! :)
