Butternut Squash Soup

Excellent recipe!! I put the squash in the oven at 400 for about 30 mins to soften it up a bit. Then I put it in the food processor to chop it up before putting it in the pan with the onions. I had no marjarom, so I substituted it with oregano. I only used half the recommended amount of cream cheese. I thought it was a really tasty and easy recipe and I will definitley make this again!

Cake Balls

Great recipe! I used vanilla cake mix, chocolate frosting, and one bag of semi-sweet choclate chips as coating. I followed the advice of others and let the cake cool for about 30 mins before crumbling and adding the frosting. I then refrigerated the mixture for about 2 hours. It was so easy to roll into balls after that, and then I put the balls into the freezer for about an hour. I melted the chocolate chips in the microwave and mixed them to a nice, smooth consistency. Then I dipped each ball and put them on tin foil because I didn't have wax paper. In my opinion the chocolate chips worked great and they are less expensive than bark. The only thing I will do differently next time is try using 1/2 container or frosting to give it more of a cakey taste and less of a frosting taste. Next time I think I'll make red velvet cake mix with cream cheese frosting - yum! Anyway these taste great, and the cake/frosting selections are endless! Great for parties too, my food never comes out looking "pretty" but these look great!

Chicken Parmigiana

Very good. It was similar to my own recipe I've been using for a while. I don't dip the chicken in eggs, and I change up the breadcrumb mixture a little. I add parm cheese, salt & pepper, garlic & onion powder to the breadcrumb mixture. I also cook the cultlets in a frying pan.

Angel Hair Pasta with Shrimp and Basil

Very good recipe. I make macaroni & sauce every Sunday so I was looking for a little something to liven it up. The white wine was an excellent addition. I used crushed tomatoes though, only 1 can and it was more than enough. I also added parsley and a chopped onion. I cooked the shrimp at the same time the pasta & sauce were cooking because I didn't want them getting overcooked. I can't wait to eat the leftovers today!

Chicken Cordon Bleu II

This was really amazing and so easy! I followed the suggestions of others and coated chicken in breadcrumbs not flour, I also doubled the sauce. I had some leftover swiss so I added some on top of each chicken about 1 min before I was done cooking. The wine sauce was phenomenal! Will definitley make this again!

Garlic Baked Potato

Loved this. I had to reduce the cooking time so I heated the potatoes in the microwave for 4 mins on each side. Make sure you stick them with a fork to make some holes so they don't explode. Then I followed the rest of the recipe, adding pepper to the skin as well and baked for 25 mins. Topped with butter and sour cream. The skin was so cripsy I will make my baked potatoes like this from now on!

Lemon Macaroon Tartlets

Wow this was soo good! I never bake but this recipe was so quick and easy. The only addition I made was adding lemon zest and freshly squeezed lemon juice to the pudding to give it an extra lemony kick. The presentation is great too - my food never looks as good as it tastes but this definitley does. Great recipe for parties, I'll definitley be making this treat again!

Chicken Enchiladas II

This came out fantastic! As my husband was eating it he told me to go online later and give it 5 stars! I did make some modifications. I doubled the recipe and used chicken tenderloins. I cooked the chicken in oil a few hours before and set it aside. For the soup mixture I used one can of condensed mushroom soup and one of condensed chicken soup, and the sour cream. I used a white onion, and 6 oz chile peppers. When I mixed in the chicken, I also put in taco seasoning mix which gave it a really good kick. With the remaining 3/4 of the liquid mix, I added 1/4 cup enchilada sauce instead of milk. I served it with sour cream, hot sauce for an optional topping, and refried beans on the side. I will defnitley be making this again!

Shepherd's Pie VI

Excellent! Followed the reviews of others and added garlic along with the onions when cooking the ground beef. I also boiled the carrots and potatoes together and separated them afterwards. I added some peas as well. I doubled the amount of ketchup for the ground beef. I also used beef gravy mix and water to replace the broth. Next time I will add a little worceshire sauce to the ground beef. I also added some milk to the mashed potatoes because I thought they'd be too dry without it. I only cooked it for 15 mins. My husband put some tabasco sauce on his. I will definitley make this again.

Shrimp Scampi V

I'm updating my review since I've made this numerous times and it has become a family favorite. This recipe is excellent. I added some lemon juice to the sauce and along with the butter, I sauteed the shrimp in olive oil. If I have chicken broth I prefer add 1/2 cup as well. Cherry tomatoes are a nice addition, they add color and some flavor. Top with crushed red pepper flakes for an extra kick.

Sloppy Joes II

My husband loved it. We both hadn't had sloppy joes in years and this was a good, easy dinner. I made the following changes: I doubled the sauce as others suggested, it's really a must if you want SLOPPY joes. I also added a tablespoon of minced garlic and about 4-6 ounces of tomato paste. I didn't have brown sugar so I added 1/4 cup barbeque sauce that had brown sugar in it. I served it with corn on the cob on the side.

Chicken with Lemon-Caper Sauce

Very very good. I gave it 4 stars because I made some changes. I dredged the chicken in egg and flour first off. Then, instead of white wine I used about 1/4 cup of vermouth and 1/2 cup chicken broth. I let the sauce simmer for a while to thicken up and added some parsley. Yummm I will make this again definitley.

PHILLY Bacon and Tomato Presto Pasta

I liked this recipe but I did make some changes. I just used what I had in my house so I chopped onions and garlic and added regular cream cheese. I cooked the cherry tomatoes in the oven for 10 mins because I love how they come out like that with the skin just cracking. I then added the tomatoes and bacon to the cream cheese mixture. I added some basil as well. It came out very good, reminded me of alfredo sauce. I will make this again

Baked Asparagus with Balsamic Butter Sauce

Awesome recipe. I tripled it and topped some over stuffed salmon.. yummmyy.. I also took the advice of others and let the butter brown, I switched around the measurements for the balsamic(used tbspn instead) and soy sauce(used teaspn). My asparagus were not exactly the way I wanted them but I think I put a little too much cooking spray. I will make this again!!

Scallops with White Wine Sauce II

I thought this recipe was really tasty. I doubled the recipe, added oregano and red pepper. I substituted an onion for a shallot. I fried the scallops and seasoned them with salt, pepper, and a little Old Bay. My sauce didn't thicken up as I'd hoped even after letting it simmer. It was still very good though.

Best Toffee Ever - Super Easy

This was so quick and easy! Mine came out a tiny bit brittle but I was also doing it without a thermometer, so I'm still giving this recipe 5 stars! I was a little scared before I made it because in the reviews some people had trouble, but I thought it was a really simple recipe. Will definitly make this again!

Chicken Milano

Fabulous! This recipe was amazing! As suggested by others, the key to make the sauce thick is to cook it before you make the rest of the meal. I cooked it and refrigerated it about 4 hours before I made the chicken and macaroni. When I reheated the sauce it was so thick and creamy. The only change I made was adding onions. And I did use the sundried tomatoes soaked in olive oil, my local deli didn't have them plain, it didn't make a difference. Overall the recipe was amazing! My husband loved it he said it's one of the best and even my 1 year old was licking the sauce off the spoon while I was cooking it! Definitley going to be a regular meal at my house!

Excellent recipe!!! I doubled the recipe but used a little less olive oil. I also used a can of diced tomatoes and black olives instead of greek olives. This recipe was great my husband loved it too!!
