Cheddar Pecan Stuffed Mushrooms

my husband is diabetic so I had to x the breadcrumbs. Also, my grocery store -- I live in the boonies of NW NJ-- was out of scallions so subbed in leeks instead. Rather than breadcrumbs, did smashed low carb pretzels. Worked great! Only thing is I had much more filling than mushrooms. No biggie, used it in a stuffed bread which got amazing raves. Awesome, unique recipe. If you like hot stuff, add some fresh jalapegnos!

Brownie Mix-Black Bean Brownies

Ironically, I tried this recipe on April Fool's Day! I coach a youth running program and I thought how funny to make brownies that were actually somewhat healthy for them. Most of the kids would be mortified to think they ate and liked black beans. Tried it out this am and it is AMAZING! Decadent tasting and chock full of fiber-filled, healthy beans! The kids will never know but I think I'll make the parents' April Fools Day by letting them in on my little culinary secret. These will become my go to brownie! Thank you! (make sure you mix the beans and water very thoroughly before adding the brownie mix - I used a blender for this then transferred into a mixer). What a great, secret recipe!

Maple Kale Crisps

WOW! I found it to be fabulous and very unique! The only thing I changed was to use Sugar Free, no calorie maple syrup. I will be serving it at a BBQ on Monday and can't wait for people's reactions when they learn it is kale.

Pistachio Twists

Well, I completely forgot to get the puff pastry at Shop Rite BUT I had Grands rolls from Pillsbury. Took them out of the can, rolled them out and proceeded as the recipe suggests. Cut into strips but did not twist. They were AWESOME! ! ! Also, if you buy the pre-shelled pistachios, you don't need any more salt. Bravo!

Pineapple Ricotta Muffins

Great recipe and even for those who don't THINK they fancy pineapple! I didn't do the precise measuring, but just mixed the liquids then added the Ricotta then the cake mix and it came out fabulous. I did add a tsp of vanilla which added a nice little pop of flavor. No need to frost and definitely get the crushed pineapple that's in its own juice not sweetened in any way. Also, use REAL ricotta not low cal or diet. The muffins loose texture if you sub in the fake stuff.

Rhubarb Salsa

My dear friend, Shawna, has a huge garden and gave me the most lovely rhubarb. It was so fresh and it's flavor quite strong so I used the 2 cups of rhubarb then doubled everything else. Took another's suggestion and added fresh strawberries too. Fabulous! The next night I added some avocado to make it more of a guacamole! Great!

Chicken Pasta Salad II

Good salad that is so versatile. I'm giving it 5 stars, but it's certainly a recipe that commands changes that suit personal taste. Next time, I will use Zero Calorie Russian Dressing instead of Italian and used Lite Mayo to reduce the calories. Also I subbed in a fresh, seeded jalapeño pepper for the green pepper and increased the onion. I had Vadalia on hand but next time will definitely use red. Finally, replaced the green olives with black olives. Thanks for a great base recipe! ! !

Moist Yellow Cake

I followed another reviewer's advice and creamed the butter in with the flour. I was apparently so pre-occupied with doing this that I completely forgot to add the sugar! Well, two 6 year olds loved it sans sugar. I frosted them with a homemade buttercream recipe from this site 'cept I subbed in Splenda. Later on, I realized I'd forgotten the sugar. So if you want a great sugar free recipe, omit the sugar ... but do frost.

Yellow Clooney Cake

I thought I was making this recipe and had mistakenly taken another off of the site. BAD mistake. It came out like a dense rock... like the one Patrick lives under in Spongebob. Anyway, this one rocked and thanks for educating me about the essentialness of using cake flour vs all purpose!

Apple and Brown Sugar Corned Beef

Amazing. Simply amazing. I have never liked this before and loved it. My husband, who is Jewish, is a corned beef connoisseur and said it was the best he's ever had. Kept the juice and spices the same but did just one three pound corned beef and only used 7 potatoes, one onion and a half a head of cabbage. Thank you for this! ! ! !

Butternut Squash Soup

Absolutely awesome! The first time made it with a fresh squash from my friend's garden. The second time, used six cups of frozen butternut squash cubes (in the freezer section) and it tasted the same and took a quarter of the time! An absolute winner whether you choose the long road or the short road.

Lobster Soup

Five stars with the following changes. Add a good sprinkle of Old Bay seasoning. When you add in the milk and chicken broth, use a soup hand blender to blend. Don't just cook 10 min. The onions will not be soft. I used two 8-oz packages Trans Ocean Lobster Classic Chunk Style Lobster. This is a fantastic imitation lobster (do NOT use Louis Kemp brand...ick). Let simmer on low one hour stirring occasionally. Cool then run through a blender. Reheat and add the cream. WONDERBAR!

Sparkling Grapefruit Pie

My Dad has always been a huge grapefruit fan! When visiting his Mom, our Nana, in Florida he'd love having grapefruit and insist my brother and I each have a spoonful of the juice. I made this for Dad. Used a graham cracker crust and sections of grapefruit. Used store-bought Ruby Red for the juice. Lemon jello and did a layer on the bottom of a combination of cream cheese + vanilla extract. OUTSTANDING and thanks for this very unique recipe.

Good dough recipe, but the finished product was rather bland. I'd recommend either adding a little banana liquor to the filling or some vanilla icing to the top

Strawberry Bread

Outstanding! I made it with frozen strawberries. Thawed them then patted them dry and tossed them with a big of flour before adding to the mix. Outstanding bread! Don't omit the pecans and definitely use pecans vs another nut. Almonds just aren't the same. Thank you for this, Ellen!!!!!
