Fresh Blueberry Pie I

I followed the recipe as stated except I substituted 1T of cornstarch for the tapioca after I read another review stating that it worked. Well, the pie came out very runny but the flavor was great. The lemon juice and zest really works well with the blueberries adding just a bit of tartness to the sweetness of the blueberries.

Florida Strawberry Muffins

I read all the reviews and was worried that I would not have enough liquid from the strawberries, but I did! The chopped strawberries and sugar mixture produced more than 1 cup of liquid. Per the other recommendations on this page, I used more sugar and I added some cinnamon to the batter. Also, I used 1 stick of butter due to the extra sugar used. Great muffins! Will bake again.

Brown Sugar Meatloaf

This is great recipe. I did make a few modifications. I added minced garlic, and onion to the meat, only 1 egg, 1/2 cup milk, and 1 cup of cracker crumbs. Put the glaze on top. turned out great. Will make again.

My Best Clam Chowder

This is a good base recipe. I did modify it a bit to suit my personal preferences though. I diced and browned six slices of bacon before adding the veggies. I omitted the cup of carrots and added an extra cup of potatoes. Per the recommendations of some of the other reviewers, I used 5 cups of chopped clams, their juice, and an extra bottle of clam juice instead of the water. I used a mix of milk and half-and-half to cut down on the fat. I will use all low-fat milk and less flour next time--it was too thick or me.

Easy Coq Au Vin

This is quite an easy and convenient take on the traditional recipe. Perhaps I cooked it longer than others, but my chicken did not come out purple. I added more chicken stock as the sauce got a bit too thick even without using a thickening agent. I used a lot of salt, pepper, dried basil, and fresh chopped parsley with I believe was key to adding flavor. I will try this recipe with mushrooms next time.

Easy Garlic Broiled Chicken

This recipe is truly forgiving and great for broiling chicken. I used fresh chopped parsley and some dried basil and everyone enjoyed it. I will definitely make it again!

Asian Lettuce Wraps

I adjusted the recipe to suit what I had on hand and our personal tastes. I chopped up pork into bite-sized pieces because I didn't have minced pork, I didn't have tofu or the recipe, and since I like food with a kick, I added 2 T of hot chile paste. We also used romaine lettuce because that is what we had. It was a little messy, but very satisfying. We will make it with minced pork and tofu next time.
