Microwave Bread and Butter Pickles

We finally planted the vegetable garden that we've been talking about for years. The cucumber plants are going hog wild! I've been looking for recipes to use them up, and this one is definitely a winner. I followed the recipe exactly and they came out great. After the family kept requesting more and more pickles, I started to worry about all of the sugar. So, I decided to try it with Splenda. I am happy to say that they turned out just as good! Thanks for this quick and yummy recipe.

Roasted Okra

After reading a few reviews, I pretty much stuck with the original recipe. Sliced the fresh okra, put them in a bowl with some EVOO, laid out in one layer on foil-lined pan (for easy clean-up), sprinkled with creole seasoning and baked for 16 minutes at 425 degrees. Was darn tasty, but may cook it a bit longer next time for some crunchiness. My husband and teenage son both liked it. That's a good thing, because our okra plants are producing like crazy!

Eggnog Gingerbread Trifle

Was a little disappointed in this dish. The cake dried out quickly, and there was too much of it in proportion to the pudding and whipped cream. I might try it again, but with a pound cake instead to add some moisture.

Coconut Macaroons III

These taste great, and oh so easy to make. I lined my baking sheet with parchment paper, which worked out well. After the macaroons cooled, I dipped the tops in white and milk chocolate and sprinkled with colored sugar. Very pretty on a cookie tray.

Egg Casserole

This was straightforward and easy to assemble. Tasted great, perfect blend of egg, cheese, and sausage. I've made casseroles before that had to sit overnight, and this one was just as good without the wait!

Apple Banana Cupcakes

I gave this 4 instead of 5 stars only because I had to add a couple of things. I took some of the other's advice and used a cinnamon streusel topping, I used about 1 1/2 c of mashed bananas, and doubled the cinnamon to 1 tsp.. I didn't have buttermilk, so I used fat-free half and half instead. Came out super moist and flavorful! Will be adding to my Recipe Box. Thanks for recipe.

White Chocolate and Cranberry Cookies

Made a double batch of these so I'd have enough for family and a school event. Very moist, tasty, and easy to make. I used 2 cookie sheets to speed up the process; one greased and one with parchment paper. Both worked well. I didn't have brandy on hand, so I used 1 T of amaretta instead. Very yummy. Didn't and won't change anything else. Thanks for recipe.

Peanut Butter Cupcakes

Sorry, I don't like to leave negative reviews, but the best I can say about these is "they were okay". That being said, I may give them one more try because I had to substitute some of the brown sugar for white sugar with added mollasses. Maybe that made a real difference in the flavor. I topped them with a chocolate ganache icing which went well with the cupcake.

Sweet Restaurant Slaw

This was very delicious. Made it for 4th of July BBQ and everyone loved it. I used Lite Miracle Whip, doubled the onions, omitted the poppy seeds (didn't have any on hand), and added 2 ribs of diced celery. Made it the day before and it was very flavorful by the next day. Will make again and again.

Potato and Bacon Salad

I made a double batch for our annual 4th of July party. It was very, very tasty. I omitted the parsley because I didn't have any on hand, and used lite Miracle Whip for the mayo. Will make this in the future instead of my mama's recipe (sorry Mom!).

Easy Spiced Brown Rice With Corn

This was quick and easy, but I added some ingredients as other readers suggested to improve the flavor. I added 1 can of Rotelle (?sp) with chile peppers and about 1/2 c of onions. I also ommitted the olive oil and used chicken stock instead of water. Will make again.

Delicious Raspberry Oatmeal Cookie Bars

Very easy with simple ingredients. I did not have raspbery jam, so I used fresh berries that I crushed and added some sugar to; worked well. I also added about half a teaspoon of cinnamon to the dry ingredients. My teenage son and husband both asked why I didn't make a bigger pan. Will definitely make again. Thanks for recipe.

Wild Rice and Asparagus Chicken Breasts

This was really good. I used 2 breasts and 2 thighs and 1 pound of asparagus with about a tablespoon of minced garlic. I served it over leftover white rice, and it went over well with my husband and two teenagers. I tripled the hoisin sauce and brown sugar to have enough sauce for added chicken/asparagus. I also used olive oil for sauteeing, and added 1 teaspoon smooth peanut butter to sauce to make up for not using peanut oil. Will definitely make this again, maybe experimenting with beef and/or another vegetable. Thanks for the recipe.

Best Black Beans

I made this for Cinco de Mayo at the office and it went over well. I doubled the garlic and cilantro (I'm from New Orleans, and like strong flavors). Followed the rest of the recipe as written, except after simmering for a while, I poured the beans into a shallow casserole dish, topped with half a cup of shredded cheddar cheese and baked for about 15 minutes.

Snickerdoodles I

These were good, and fairly easy to make, but I found them a little flat on flavor as compared to other Snickerdoodles I've had. I will make them again but follow the advice of other cooks and use butter flavored shortening. Also, a word of advice, be sure not to overcook them as they turn out very crunchy.

Great recipe...spiced just right....made it for my husband's office Thanksgiving lunch and it was a big hit...I did top it with cream cheese icing, which was the perfect finishing touch. Highly recommend!

Six Can Chicken Tortilla Soup

I made this in my crock pot, cooking for about 4 hours...was very easy to throw together...I used raw chicken breasts cut into thin strips, and then shredded them with a fork after they turned tender...I did take advice from other reviews and added cumin and chile powder as it cooked...I served with sour cream and shredded cheddar cheese on top...served this for supper and had very little leftovers from my husband and two teenagers...will make again and probably double the quantities.
