Maple Salmon

Perfect dish! I made it exactly with the ingredients listed except I did bake for about 15 minutes and then broiled for a crunchy outside for about 5-7 minutes.

Outrageous Chocolate Chip Cookies

Delicious cookie! I switched the measurements of brown and white sugar as many suggested. Cooking for less time is better to retain moisture.

Honey Soy Tilapia

This was delicious! I let the fish marinade in the fridge for one hour - turning the fish after 30 minutes. Then I cooked the fish in the same marinade pan. A huge hit with the entire family - even my 5 year old.

Spanish Rice II

Use chicken broth instead of water, and 1/2 teaspoon of salt instead of 1 teaspoon. Add one clove of mashed garlic. Delicious!!!

Maple Butter Frosting

Very nice basic frosting recipe. I used skim milk because I was out of cream and real maple syrup. I needed to use a little extra sugar for consistency.

Red Velvet Cupcakes

These cupcakes were light and fluffy and delicious! I used cake flour and I only baked for 15 minutes. Any longer and I think the cupcakes would have been quite dry.

Amazing Chicken

Fluffy Whole Wheat Biscuits

These were excellent, especially considering they were whole wheat based. I used buttermilk instead of regular milk but minus two tablespoons of buttermilk from the stated one cup. I also added two teaspoons of baking soda and one extra teaspoon of baking powder. I cooked them for 10 minutes.

Oat Applesauce Muffins

Excellent muffins! Very moist and soft and flavorful with the following modifications: Add 2 teaspoons of cinnamon; 1/2 teaspoon nutmeg; 1/2 teaspoon salt; 1 teaspoon vanilla and one diced apple. Healthy and a hit for my whole family. Stays soft for a while but best hot right from the oven.

Best Ever Banana Bread

Slow Cooker Thai Peanut Pork

This was a pretty good dish. I used white wine vinegar since I didn't have rice vinegar and I added 1 tablespoon of brown sugar. Instead of red pepper flakes, I used 1/8 teaspoon of cayanne pepper. I found the dish to be a little spicy for my preschooler. Also, the boneless pork chops I used were done in about 6 hours.

Maple-Drizzled Apple Muffins

These muffins were very good and very easy to make! I shredded the apples instead of dicing them and I followed the rest of the recipe exactly as written. I made them into mini-muffins instead of large muffins which only took 11 minutes to bake and were perfect for my preschooler and his friends!

Flavorful Beef Stir-Fry

Excellent stir fry! I made a batch of sauce (minus the cornstarch) and added 1 teaspoon of minced ginger and 1/4 teaspoon of garlic powder. I let the meat marinade in the sauce for 4 hours. Then I discarded the marinade and made a double batch of sauce (with the minced giner and garlic powder) and put the meat in the double batch of sauce. I cooked the vegetables in sesame oil - I added mushrooms to the mix. I added peas rather than pea pods. There was plenty of sauce and the taste was delicious! I served it over hot white rice. My preschooler loved it!

Honey Baked Chicken II

This chicken was excellent! As with other reviewers, I made the following modifications: 1. Used boneless, skinless chicken thighs 2. Cut the butter to two tablespoons 3. Cut the salt to 1/2 teaspoon. I put the marinade on the chicken in a baking dish the morning I was going to use it. I let it marinade all day and then baked it at 375 covered with aluminum foil for 20 minutes. Then I basted the chicken and removed the foil, cooking the chicken for another 20 minutes. I basted it again a second time about 10 minutes before it was done. The chicken was super moist and flavorful and delicious! My preschooler loved it and asked for more.

Swiss Chard with Pinto Beans and Goat Cheese

This was good. I used olive oil instead of vegetable oil and 1/8 of a teaspoon of cayanne pepper instead of pepper flakes. I also used black beans instead of pinto. I also did not melt the goat cheese in the oven - it melted fine in the pan. It didn't look very pretty, but it tasted good.

Irish Soda Bread I

This bread was very moist and quite delicious. As other reviewers suggested, after it is out of the oven, I brushed the top with melted butter and covered tightly with foil to steam for 30 minutes to lock in moisture. Next time I will try adding the caraway seeds as others suggested. I used 1/2 cup of raisins and 1/2 cup of cran-raisins. Delicious!!

Easy Broccoli Quiche

Excellent! As with many other reviewers, I pre-baked the crust only for 7 minutes with a layer of cheese pressed into the bottom. For the filling, I only added 1/2 an onion. I included 1 1/2 cups of broccoli (frozen, but thawed and drained overnight on paper towels) and 1/2 cup of chopped mushrooms. I used three eggs and one cup of milk. Instead of mozzarella, I used a cheddar and mozzarella mix. I cooked for 45 minutes and then added a light layer of cheese and baked for 5 additional minutes. My preschooler loved it!!

Texas BBQ Chicken

This was pretty good. I left out the cayenne pepper because of my toddler, but the taste was still good. A bit watery as other reviewed noted, but I added about 3/4 cup of cut up mushrooms and 1/2 red bell pepper strips which helped. I marinated the chicken and veggies in the sauce for 8 hours beforehand. I made it with chicken thighs and cooked it at 350 for 45 minutes. It turned out extremely tender. I will note that we didn't really care for the sauce on the rice we served it with, but the sauce on the chicken and veggies was good.
