Rubbed and Grilled Pork Loin

What a fantastic rub! I used it for a grilled tenderloin, and everyone loved it. I was out of coriander, so I added a bit of curry powder instead. I will definitely make this again.

Spicy Mango Sweet Potato Chicken

This was really good. I'm giving this a 4 because I think it does needs something with a little extra crunch and color (might try the asparagus as someone suggested) because the sweet potatoes and mango are so soft. I'll probably try roasting the sweet potatoes too. I toned down the spice a lot for my little guys, less than 1 Tbsp in the sauce and no pepper flakes, and then my husband and I added the spice at the table which worked well. I used cayenne pepper sauce (Franks) because I figured sriracha would be too hot but I do think the sriracha would be perfect. I used regular soy since that's what I had on hand, and I served it with couscous. It was a big hit!

Quick Couscous with Raisins and Carrots

I made a couple modifications - I used 1 Tbsp olive oil instead of the butter and I used 2 c. lower sodium chicken broth instead of the broth and water. And based on someone's suggestion below, I added the raisins with the broth so they were plump. With these modifications, the dish was a big hit, even with my 5-year olds. I may add more raisins next time (and use golden raisins if I remember to get them).

Strawberry Cake and Frosting I

This rating is just for the frosting. My boys wanted chocolate cake with strawberry frosting, so I thought I'd give this one a try. Based on some of the other feedback, I thawed the strawberries in a strainer and then used a potato masher (the kids loved helping with that part!). I did use a tiny bit of the liquid, but I'm definitely glad I drained them as it came out just right!

Fresh Fruit Salad

Really good dressing, not too sweet, tart or overpowering! I used a non-fat vanilla yogurt, and it was great - a big hit my dad's birthday party. I used strawberries, blueberries, raspberries (Dad's favorite!), red grapes, peaches and bananas.

Rosemary Chicken with Orange-Maple Glaze

The chicken came out a bit dry, so next time I'll saute it for a shorter length of time so it doesn't overcook when simmering, but the sauce was very good. I used dried rosemary but softened it in water so it wasn't too crunchy. I also added a bit of cornstarch at the end to thicken the glaze after simmering with the chicken.

Baked Ham with Maple Glaze

I made this for the second time and made some modifications based on my previous review. If you want the maple to be more dominant than the mustard, for a 5lb ham, I'd recommend cutting the dry and dijon mustard portions in half and for the maple syrup, reduce a 1/2 cup to about 1/4 cup. Also, I definitely recommend using bourbon instead of the vinegar (I added it as I was finishing the maple reduction). The mustard was still present with these modifications, but it tasted more like a maple glaze than a mustard glaze, which was what I was looking for. This was a really big hit with everyone at Easter this year!

Walnut Sandwich Cookies

Really good cookies - I loved, loved, loved the shortbread cookies, and the filling is very good. The orange flavor was a little strong as I wanted the walnut flavor to be the dominant taste, but I'll play with the filling.

Dad's Cheesy Bacon Wrapped Meat Loaf

Not the healthiest meal, but it is well worth it to have this as an occasional treat. SOOOOOO yummy! I made it for my bacon-loving stepson for his birthday (along with bacon-cheddar mashed potatoes for a bacon-themed meal, he was in heaven!) and it was a big hit with all. I made it exactly as listed, as it was perfect as is.

Melanie's Chili

This was a nice, simple recipe - which is just what I was looking for. I followed made the double batch with the pinto and kidney beans, which was nice. I did think there was too much liquid (I cooked it down a bit before serving) and a bit too "tomato-y", so I might try it with just one can of tomato sauce next time. I left the cayenne out because my little guys can't handle spice yet and my husband and I added some Frank's RedHot to our bowls to add it back in - all of us were happy. :) I'll make this again - I love that it was so quick to make!

Peppermint Ice Cream

This ice cream is soooo good and easy to make! I followed the suggestions to replace 2 tsp of the vanilla with 2 tsp of peppermint extract, and I'm really glad I did. I also added a couple drops of red food coloring to make it just a little more pink. I will definitely make this again.

Bacon Risotto

Loved, loved, loved this! This is a relatively simple risotto, but it still had great flavor. We made it as a side for our Christmas duck, replacing a more complicated risotto we've made in the past, and it was wonderful. It was so good, I'll make it other times during the year as well.

Tomato Basil Soup I

Still one of my absolute favorite soups - I make this all the time, whether I'm watching my weight or not (made it tonight, in fact!) My family loves it too and asks for it often. The key is blending the soup before serving it. It gives it that creamy consistency without adding the fat and calories of cream.

Pork Chops for the Slow Cooker

I followed the advice of many and basically doubled the sauce but instead of doubling the soy sauce, I added honey. So my ratio was: 1/4 c brown sugar, a couple pinches of ginger, 1/2 c soy, 1/2 c honey, 1/2 c ketchup, 4 tsp Tastefully Simple Garlic Garlic (equiv of 4 cloves), no salt or pepper. The sauce was really good, big hit with every one. As for the length of time, I had REALLY thick boneless pork chops (almost 2" thick) and they were just a touch overdone at 4 hours so watch the doneness carefully. 6 hours is way too long. I'm giving this a 4 because the sauce was great, esp with everyone's suggestions.

Beef Tips and Noodles

I followed the advice of a few others and used milk instead of water. I also added about 1/4 c of red cooking wine, which really makes a difference. Very good sauce. The meat was a little over done baking for an hour, but that might have been the cut of beef I was using.

Chicken a la Camille

I used 8 chicken breasts and eye-balled the seasoning in the bag. I still didn't put in 1/4 cup but it was still a little too much, so I'll do less next time. The cooking method, however, works great to get the seasoning to stick to the chicken under the sauce. I'll definitely do this again - and like others will probably play with it a bit, trying different seasoning and sauces.

Chicken Pasta II

This was really good, I'll definitely make it again. Even my picky little guys ate it up. I used crumbled bacon, adding it after cooking the chicken. I also added 1 small chopped onion and 1 minced clove of garlic with the chicken pieces to give them more flavor since I didn't have the bacon grease.

Kabobs

A very good kabob marinade and so simple. The steak and chicken were really tender and flavorful. I marinated the meat overnight (separate bags for steak and chicken) and flavor was fantastic. The onions and peppers I did about 2-3 hours - I'll do it a little longer next time to give it more flavor, although they were still really good. We skipped the mushrooms since we don't eat them much and added fresh pineapple instead (skipped the marinade, just added to the skewers). I followed the advice of others here and had the meat on separate skewers than the veggies to make cook times easier. Great recipe, will definitely make again!
