Rum Cake I
First time making Rum cake and it turned out fantastic! I made it for Christmas day and all the company over raved about it. I left out the nuts. Other than that I followed the recipes exact. Easy and delicious. I will make this again and again.

Amelia's Slow Cooker Brunswick Stew
My husband's mother use to make him brunswick stew when he was little and it was his favoriate. I looked up brunswick stew and found hundreds of recipes. I questioned him on his Mom's version to make it as close to her as I could and this was it! i have made this at least 50 times and it is always a big hit. I did make a few changes. I leave out the ribs completely. I sautee onions and green peppers in olive oil and put them right into the slow cooker. Also, a huge short cut, I buy two rotissarie chickens and just pull all the chicken right from the bone (this saves sooo much time)! Put the chicken in the crock pot along with all the other ingredients. I also double all the ingredients (still only using two rotissarie chickens)to have a full crock pot and have enough to freeze.This is just GREAT! Everyone tasting it always wants the recipe and very simple to make too.

Chicken Quesadillas
The only reason I didnt give this a five was because they fell apart so easy we had to eat them with a fork and knife. I used the taco seasoning because I like the flavor so much better than fajita seasoning and it was the right thing to do! After reading reviews, i cooked the chicken, cut in pieces, in a skillet with a little heated oil and then just when chicken was pink added the peppers and onions until veggies were soft. This made the chicken and veggies stay moist and yummy insead of dry.I sprayed the wheat tortillas with Pam on both sides and placed an entire tortilla down, added mixture and cheese and then added another tortilla on top.I think next time I will try olive oil or water and just do one side of each tortilla and see if they hold the inside together better. I also used light colby shredded cheese, omitted bacon bits, and added light sourcream on top. Even my picky 9 year old loved them as did my 15 year old, and hubby. We will make it a regular recipe and I like forward to changing things up like adding hot peppers to a few of them or mushrooms. Thanks for the recipe!
