Asparagus with Sliced Almonds and Parmesan Cheese

Good and tasty. I prepped the asparagus, as usual w/olive oil, fresh ground salt and pepper, minced garlic under the broiler. Then, added the almonds toward the end, and parm cheese at the last second to kind of melt it but not totally melt it.

Chicken Breasts in Caper Cream Sauce

Her husband should become a cook. This is delicious. I used olive oil in place of butter, rice milk in place of chipping cream, lemon juice concentrate in stead of the lemon pepper, and fresh minced garlic in stead of garlic powder. Mixed together the dill weed, lemon juice, salt, garlic and olive oil and marinaded the chicken for about 1/2 hour. I also whisked up some chicken broth and cornstarch to add to the pan after the chicken was cooked to create more sauce to go with the quinoa. Very very good, quick and easy.

Thai Red Chicken Curry

With the suggestions from other reviewers, I added coriander, and fresh minced garlic to sesame and olive oil. I didn't have zucchini, so I added green bell peppers along with the red bell peppers and carrots. I used plain rice milk instead of coconut milk, and didn't measure out the red curry paste or peanut butter, but about two large scoops of each was the perfect for us. Served over quinoa. Will make again, and enjoy again!

Lemon Garlic Tilapia

I really like this mostly because of the garlic! I sautee the garlic for a few minutes with the parsley, then put on the tilapia. Of course, the lemon is a very nice touch. Served with quinoa. Very Great!

One Bowl Brownies

Wow!!! Delicious. Very easy to make. I was thankful for the other reviews to use cocoa & oil instead of choc squares, as I always have cocoa and oil. So tasty, may even be replacing my long time favorite brownie recipe. This one is much more fudgey, which I really love!

Tilapia Scaloppine

Light, tart, not too tart, though! Yummy. I had to use chicken broth in place of the wine, but still amazing. Next time, I'll try wine. Other than that, I halved the butter, and added more olive oil. I'd add more mushrooms next time. Served over quinoa noodles. Nice combo of flavors. My husband thinks it'd even be good without the fish. Maybe we'll try shrimp, or just additional veggies.

Chinese Chicken Fried Rice II

It was a great way to make good use of left over rice. It would have been better with diced up carrots, and some peas, to make it taste more delicious, like the recipe from my Chinese friend.

Salsa Chicken Burrito Filling

Pretty good. Nothing special, but it was easy and tasty, I'd make it again. (Put froz chicken in the crockpot like others suggested, then added left over rice, and beans to make it go further).

Mexican Casserole

I cooked the chicken with added chili powder, cumin, and celery salt. Those spices, combined with a bit of the taco seasoning was GREAT! I also cooked brown rice (1 C rice, into 1 C water & 1 C chicken broth). I left off the 2nd layer of cheese to cut back on some of the cholesterol-turned out delicious without it. My 14 month old daughter is chowing down on it right now, and loving it! She's also chugging milk, so maybe it's a tad spicy. Oh well, isn't bothering her, that's for sure!

Erin's Indonesian Chicken

Amazing. Super flavorful. As somebody else reviewed, I added a few dashes of cumin, and curry (to the chicken) while cooking. I didn't have green beans, so I sauteed zucchini, red/green bell peppers and the green onions. The different combo of veggies likely contributed to the great flavor. I'll probably do it again this way, rather than using green beans. My husband and I both loved the flavors, and he said, "gotta make sure you keep that recipe!" I toasted some chopped peanuts on the stovetop before sprinkling them on top of the finished dish. Delish!

Crustless Spinach Quiche

Good quiche. I added slices of deli turkey to make it more of a meal and didn't have as much spinach (used fresh) as it called for. Also, I used cheddar and some mozz, as I didn't have muenster. Still delicious, but next time, I'll add more spinach and garlic.

Very tasty, a nice change, and best of all, quick & easy. I reduced the honey to 3/4 C, and increased the dijon a bit which was a great mix of flavor-not too sweet.

Outrageous Chocolate Chip Cookies

Amazing, even without chocolate chips. To me, the chocolate makes a cookie, but in this case, I loved every bite of all the dough and the cookies that I ate, even w/o the chocolate. Next time I make them, however I do hope to add it, just didn't have any in my house for this time. Delicious. I did swap the amounts of brown for white sugar as suggested by others. and actually used sugar in the raw for my 'white' sugar. Didn't make tons of cookies but that might be due to how much dough I ate.

Streusel Topped Blueberry Muffins

Pretty! I didn't have fresh berries, so I used a frozen mix of rasp/black/buleberries. I left them frozen til the very end and tried the flour coating trick-worked! I think I over folded the batter but hope that I get better with practice, as I'll be making these again. I used applesauce in place of butter and egg beaters in place of eggs, and honey in place of sugar. Oh, and 1 c. WW & 1 c. AP flour. Also, left off the streusel topping, but would try that on an indulgence batch. Yum.

Clone of a Cinnabon

Very good, but I was not amazed. Huge mistake to use wax paper on the bottom, even floured it baked into the cinnamon rolls and I could not peel it off the bottoms. I'll try it again, though as I want it to turn out better. I may try with wheat flour next time to feel healthier about eating them!
