Peach Angel Food Cake

A guilt free desert and a great way to use up some of the excess peaches from the garden. I just wish the fruit chunks would not fall to the bottom so much. The cake was baked in a tube pan. It is upside down once it is down and the cake was weighted down...Other than the appearance, it is a great cake!

Baked Cherry Tomatoes with Garlic

It was delicious and easy to prepare. Extra virgin olive oil, kosher salt was added. Grated parmesan cheese and parsley were sprinkled on top before to serving.

Martha's Vegetable Beef Soup

I used fresh tomatoes from the garden to substitute the stewed tomato & the tomato sauce in a can. Overall, this dish is pretty decent and something easy to prepare and good for a hot summer day.

Italian Spaghetti Sauce with Meatballs

This dish is insanely delicious!!! I used fresh tomatoes from the garden and use half the ingredient amount as I have only 1/2 the tomato amount needed. Since it is taking a long time to simmer, I will suggest to go with what this recipe calls for.

Fresh Southern Peach Cobbler

Since i do not eat cobbler, this rating is solely my husband's view. He loves it to death! I used peaches from the garden. Since there are some worms inside, I used more than 8 peaches. I wish there is a measurement such as how many cups of cut peaches. Also, I have cut down the white sugar mix on the last step to 1 tablespoon as I was doubting the white sugar will melt completely in the oven at the end. As i thought, it didn't melt.

Linguine Pasta with Shrimp and Tomatoes

I used half the ingredients to make dinner for two. I used fresh tomatoes from my garden. Too bad I ran out of dry white wine. So I have to cook without. This dish is absolutely delightful even without the dry white wine. So light without the taste of heavy sauce, the aroma from the tomato, shrimp along with the cajun seasoning is an excellent combo. Parmesan cheese was added before eating.

Mom's Zucchini Bread

Comfort bread....the smell of the bread will hit you before eating it. It is a good way to use up excess zucchini production from the garden. Wonderful bread!
