Quick Szechwan Sauce

We love this with the following modifications: 1. We swap out one of the T of olive oil for sesame oil. 2. We substitute rice vinegar for white vinegar. 3. We swap out one T ketchup for Sriracha hot chili sauce.

Pumpkin, Spinach, and Feta Frittata

The kids fought over who got more of this. I made it without any pumpkin or potato as I didn't have any on hand. I added 2 gloves minced garlic. It took 35-40 minutes to firm up in my oven, but I used an oval instead of 10" square pan. Very, very good.

Vegetarian Chickpea Sandwich Filling

I made this with about 2/3 cup plain yogurt instead of mayo. I also added about 1/4 cup crumbled feta cheese and used garlic salt instead of regular. Delicious.

Pear Scones

Slightly more muffin-like in texture than true scones, but moist, delicious, and very pear-tasting. Here were my changes: 1/2 cup plain yogurt instead of half and half 2 C. chopped pear I added half the pear with the yogurt so it would mash down and add liquid. The other half was very large chunks I stirred in at the end. I baked them for 20 minutes in one large, flat circle scored into wedges on a greased cookie sheet instead of making individual scones.

Playgroup Granola Bars

Awesome. Used whole wheat flour and only 1/3 C brown sugar. Subbed oat bran and ground flax seed for wheat germ. Added sunflower seeds, walnuts, almonds, dried cranberries, chocolate chips. Where have these been all my life?

Bountiful Garden Zucchini Enchiladas

Fajita Marinade I

Curried Cauliflower Soup

Very fast and easy. I cut the curry in half for the kids the adults stirred in extra at the table. Added toasted chunks of whole wheat pita croutons.

Asian Coleslaw

YUM! I used 2 packages of precut coleslaw for the amount of dressing in this recipe and it made a ton even for a big picnic. I'll cut it in half next time.
