Apple Crisp with Oat Topping

I've made a lot of apple crisps and this may have been the best one. Super easy and I like that there isn't tons of sugar mixed in with the fruit. Planning to make again for my husband's birthday!

Homemade Black Bean Veggie Burgers

Wow, these were good and so easy to make. We are not vegetarians but really enjoyed these and will make again. We made sure everything was dried out as other reviewers stated and lessened the spices just a little bit which was perfect for us. We got 6 hamburger bun sized patties out of the recipe.

Mom's Applesauce Pancakes

Delicious and a nice change from just regular boxed mix pancakes. We used whole wheat mix and it turned out just fine, follow directions as listed otherwise. Nice and fluffy and a hint of apple and sweetness to the pancakes.

Morning Glory Muffins I

London Broil for the Slow Cooker

This was tasty and very easy. My meat was so tender and falling apart by the end (I needed less time than called for). I added mushrooms and coarsely chopped the meat to make it more of a stroganoff. I did double the sauce which was nice for the noodles I served it over.

French Dip Sandwiches

Delicious! Used a smaller roast since there were just 2 of us and my hot crock pot only took about 5.5 hours. The meat was tender and just fell apart and the flavor and dipping au ju was very tasty. I'll make again for sure.

Special Lobster Bisque

My husband requested this and loved it! I had never made a seafood bisque of any sort but this was easy and turned out great. We used imitation crab meat and it was still great.

Raspberry Cream Cheese Bars

I thought these were yummy! As per other reviews, I just used 8oz of cream cheese and the smaller jar of preserves (12oz maybe)? It seemed like a good ratio to me. I'd make these again.

Black Bean and Corn Quesadillas

We used frozen corn instead of canned and baked in the oven, 350 for 10 minutes. These were really easy and delicious. We used a bit more cheese than called for I think.

Mexican Chicken Corn Chowder

Delicious and easy to make. I added a little bit of frozen corn and frozen potato cubes to make the soup a bit more hearty. It had a little kick but was not overly spicy which I appreciated. I would make again for sure.

Amish Breakfast Casserole

Yum! Made this as written, but with sausage instead of bacon. It was easy and delicious. I think 12 servings is too high though. We had 7 and there was probably 1 serving left (and we had another casserole and fruit/muffins too).

Italian Spinach Sausage Pie

Delicious and easy to assemble! I took other reviewers advice and cut the ingredients in half and it perfectly filled one deep dish crust. I used fresh spinach since I had some instead of frozen and only used a bottom crust.

Pumpkin Bars I

Delicious and so easy! I cut the recipe in half and made in an 8x8 pan and it worked well. Used store bought icing because I was lazy...would be even better with homemade. I plan to make again for sure! I did add a bit extra pumpkin.

Spinach Brownies

These are great and I have made them several times already. I mainly make them for my 1 year old daughter, but my husband and I like them too. To make them a bit more healthy for her I cut the butter waaaaay back, use whole wheat flour and add some shredded carrots to the spinach mix. They also freeze great, yum!!

Beef Pot Roast

Best pot roast I have ever made. I made it following the directions as stated and did NOT add liquid as some reviewers suggested. The roast made its own liquid by the end which made a nice gravy. I did not add veggies/potatoes either. So easy and delicious, will make again for sure.
