Layered Chicken and Black Bean Enchilada Casserole

This was very easy to make and turned out well. I made as directed except that I used leftover cooked chicken that I had from a full roaster chicken. I had no trouble with the corn tortillas "disappearing" and the casserole cut nicely into squares after I left it rest for 10 minutes.

Streusel Rhubarb Bread

This bread is very tasty. My only complaint was that a portion of the topping cracked and fell off when I took the loaf out of the pan. I left the nuts out because I did not have any, and it was still good. Good use of the rhubarb from the garden!

Italian Pasta Salad I

Not bad...I wasn't quite as crazy about it as some of the reviews here, but it was good and easy. I'd make again and just adjust the veggies I put in based on personal preference.

Cheese Biscuits

Quick, easy and delicious. A few changes on my part though...I used light sour cream instead of buttermilk and margarine instead of shortening since I did not have it. Also, I did not have time/energy to roll out the dough so I just divided into evenly sized mounds and baked as regular biscuits. May not have been as pretty, but it was easy.

Whole Wheat Pumpkin-Applesauce Muffins

These were quick and easy and used items I usually have available. Only a couple substitutions for me, regular milk instead of buttermilk, and cinnamon with a dash of cloves/nutmeg in place of the allspice. I also added a bit of coconut but it wasn't really enough to add to the muffins. I would make again, although they were not that sweet (I used unsweetened applesauce).

Spinach Chicken Parmesan

This was a quick and tasty meal that used items I commonly have on hand. I used some of the suggestions from others, added garlic, mushrooms, used a mix and frozen spinach (which is what I had) and add a dollop of sour cream. I also added some breadcrumbs to the chicken coating, but did think a lot of the coating fell off...maybe cooking it quickly in a frying pan first would help as others said. No onions or pimiento used here, and I thought it was fine!

Cowboy Oatmeal Cookies

Lately I've been having trouble with my oatmeal cookies being too flat and crumbly...not with this recipe! These turned out nice and soft and didnt get flat. They tasted yummy too! I added some extra oatmeal and vanilla as others suggested and used raisins instead of chips because I didn't have the chips. I will make again for sure.

Zucchini Pineapple Bread II

Yum! I used fresh pineapple, a little bit of coconut and no nuts. I also used a bit of brown sugar in place of a part of the white sugar. The bread fell apart a little when I took it out of the pan but I think it was just too hot. It is tasty though and I will make again.

Pineapple Enchiladas

Seemed like a great idea, but this turned out very bitter for us. We used fresh pineapple and someone else commented that they had the same bitter issue when using fresh. I'm not sure what it was, but we couldn't even finish our dinner which is unheard of!

Oatmeal Pancakes II

Yum! We had these for dinner with strawberries on top and it was great and easy. Used wheat flour and milk with a bit of lemon juice instead of the buttermilk. Will make again for sure.

Chicken Dumpling Strips

I had never made dumplings before and I think these turned out pretty well. Don't be scared off by the rolling, it was really easy. I added some carrots and mushrooms to my broth and dumped the whole thing over cut chicken that I had leftover from a roaster (did not cook it in the broth). The broth needed a bit of thickening but was tasty.

Broccoli and Garlic Penne Pasta

I thought this turned out to be basic but good. Not too heavy like some pasta can be. I made as directed with a few modifications. First, added a little extra broth (1 can versus 1 cup) and added a bit of cornstarch to thicken the sauce. After mixing the sauce with the pasta (and some leftover chicken I had) I stirred in somewhere between a 1/4 and 1/2c parmesan cheese. I would make again, nice and quick and easy.

Creamy Spinach Tortellini

This was pretty basic and tasty. I made the sauce and just put it over regular pasta since I did not have tortellini on hand. I made half the recipe and used garlic instead of onions and slightly less cream cheese than called for. Fresh spinach and no tomatoes. It had a bit of a cream cheese flavor but not overpowering. I'd make again, I usually have these ingredients on hand.

No-Noodle Zucchini Lasagna

I was a bit skeptical that this would be good at first, but I had a lot of zucchini to use so I tried it. It was really quite good! I made a few small changes...I used jarred sauce to save time, used italian sausage instead of hamburger and used fat free cottage cheese in place of the ricotta as I do in all my lasagna/stuffed shells etc. It had a bit of extra liquid from the sauce but not too bad. Overall it was tasty, a good source of veggies and may have even been better the next day. I will make this again.
