Quinoa Broccoli Casserole

White Chocolate Raspberry Cheesecake

Apple Crisp with Oat Topping

I've made a lot of apple crisps and this may have been the best one. Super easy and I like that there isn't tons of sugar mixed in with the fruit. Planning to make again for my husband's birthday!

Dee's Roast Pork for Tacos

Made this in the crock pot and it turned out great. Reminded me of the shredded pork you get in burritos at mexican burritos restaurants. Froze some and used it later in enchiladas which were great too.

Peach-a-Berry Pie

This pie turned out great. I did 2T flour and 1T cornstarch and it wasn't runny. Used fresh peaches and frozen raspberries as well a premade crust which I made into a lattice. Looked good and tasted good!

Beef Tips

This was easy and good. It was a bit on the salty side so I might look for a low sodium gravy mix next time. We did use low sodium soy already. Added fresh mushrooms and served over mashed potatoes.

Pumpkin Cake III

I thought this cake turned out great, super moist. I made it as a bundt and baked for about 45-50 minutes. I did the 3/4c oil and 1/.2c applesauce that others suggested but left everything else the same. You could add more spices but it was good as written too. I frosted with cream cheese frosting, yum!

Sweet and Sour Pork

Peanut Butter Carrot Cookies

Just made these and I can't stop eating them! They are delicious. I made pretty much as directed except used white chocolate chips. I used a bit less white sugar and just didn't measure the flour exactly so there was a bit more than listed. I have no trouble with them falling apart. I will be keeping this recipe for sure.

Gobble Up Granola Snacks

Just made these and they are delicious and so easy to make. Used honey instead of corn syrup and added a little wheat germ and flax but otherwise kept the proportions the same. I had no trouble with them crumbling.

Mom's Zucchini Bread

This was moist and delicious. I did make a few small changes, some applesauce in place of the oil, some whole wheat flour. I also used yellow summer squash instead of zucchini since I had some to finish up, it made no change in taste.

Portobello Penne Pasta Casserole

I thought this was a nice change from your regular cream sauce on pasta. If you skip the soy sauce you are totally missing out on the point of this recipe! It reminded me very much of a pasta dish I had at a restaurant in the Outer Banks. I sauteed my mushrooms and fresh spinach together ahead of time and mixed in with the pasta before I dumped the sauce on. Yum!

Pumpkin Pancakes

These tasted great but I think I must have measured something wrong because my batter was really thin not so thick like so many reviews mentioned. I thickened it up a bit and they were delicious. We got way more than 12 cakes but I think that is due to whatever mess up I made. I want to try again for sure because the taste was great!

Coconut Chicken Stir Fry

I thought this was good and easy to make. We cut way back on the red pepper flakes since we don't like real spicy. I probably used about 1/2tsp and it still had enough of a kick for us. I didn't have the cumin seeds but I bet that would only have made it better.
