Almond Spinach Salad

I made this with regular sliced almonds, not candied, because I was in a time crunch. It was still delicious! The vinaigrette dressing definitely makes this recipe. I also substituted apple cider vinegar and brown sugar for white vinegar and sugar.

Spinach Lasagna III

Delicious! In the future, I would use more spinach (it cooks down a lot). I also used just Parmesan in place of the Romano and extra (fresh) garlic. It came out great! Like someone else suggested, I removed the foil for the last 5 mins to brown the cheese a little.

Pasta With Spinach Sauce

Quick and yummy pasta! I used chicken sausage instead of ham and it came out pretty well. I also added some milk to thin the sauce.

Aloo Matar

I followed others suggestions and used 1.5 TBS garam masala and substituted diced tomatoes for tomato paste. I also boiled the potatoes before sauteing them. It came out really tasty! In the future, I might add some dried chili pepper to give it more kick. It was flavorful with extra garam masala, but not spicy.

Mexican Rice II

Simple, but tasty! I used fresh garlic and plain salt and added some frozen peas right before the liquid. It turned out great!
