Sweet Carrot Salad

I chose this recipe because it looked like it might be similar to the carrot-raisin salad that I enjoyed at Chick-fil-A. Sure enough, it is! I used light mayo, but other than that, I made no adjustments to the recipe. It was delicious.

Cinnamon Ice Cream

This is a delicious ice cream. As DPINKUS suggested, I used a pint of heavy cream and 1/2 C. of milk (skim) since that is what I had on hand. I did not alter the amount of cinnamon from what was in the original recipe. I let the mixture chill in my fridge overnight. I used my Kitchen Aid ice cream maker attachment to make the ice cream. The texture is great. It is very soft for scooping and I will be making this one again, for sure.

Quick Quiche

I admit that I added a little red pepper and mushroom to the onion, which I sauteed ahead of time in about a tablespoon of the bacon fat. The quiche turned out great. I will be making this again.

Easy Pavlova

This is a delicious Pavlova. I had one last year when I was in Australia and have wanted to make one ever since. I left mine in the oven for an hour after baking time, but it still cracked a lot. It certainly did not affect the taste, however. It tasted fabulous. I served mine with whipped cream and strawberries. I wish it was lovely enough to serve guests, but it was not. Also, I did notice a bit of an egg-y smell, as mentioned by some other reviewers.

Focaccia Bread

I thought this bread was tasty. I made it twice, once according to directions, and the second time, letting it rise longer and using the hints from other people's reviews about proofing the yeast. I would say it was a little better with the longer rise, but not much different. I used it for the Grilled Mediterranean Vegetable Sandwich.

Banana Crumb Muffins

I think this recipe is delicious. I have made it two weeks in a row, due to its popularity in my house. The only change I made was that I used 4 small ripe bananas, because that is how many I needed to get rid of. I love this recipe because it uses things I already have in my pantry. Delicious! It sure beats eating overripe bananas.

Cumin Turkey Burgers

I left out the jalapenos and cut the chili powder in 1/2 because my husband is spice-averse. I made them on my Cuisinart Griddler in 4 minutes. This recipe is great because I had everything I needed on hand already. This is the tastiest turkey burger I have ever had. I ate mine with some Miracle Whip Light, lettuce and tomato. Delicious!
