German Sweet Chocolate Cake I

I used this recipe to make a four layer cake. It was very easy to work with and did not crumble or crack. The flavor was EXCELLENT! It seemed a little dry to me on the first day. But, after letting it sit over night it was a little better.

Burger or Hot Dog Buns

These were excellent! My boyfriend made a beef burger and I made a turkey burger and both went great with this fluffy bun. I used half wheat flour and substituted the butter for applesauce and only used egg whites for a fat free and healthier bun. They still turned out perfect. I froze the buns that were not used. I will never buy hamburger or hotdog buns again!

Cream Cheese Frosting II

A little too rich of a cream cheese taste for my liking. I took the advice of some of the reviews and started off with only 8 oz. cream cheese and a little extra powdered sugar. However, when I taste tested it, I thought it was too sweet, so I slowly added more cream cheese, tasting it all the way. Eventually I had added the whole second 8 oz package of cream cheese and thought it tasted just right. But, when I tasted it with the red velvet cake I frosted with it, it was too rich and I wished that I had never added the second cream cheese. So, be careful when you are taste testing and keep in mind what you will be eating this frosting with.

Red Velvet Cake III

I definitely agree that this recipe needs more cocoa powder. I knew the reviews were saying to add 4 tbsp. but I was too afraid to add that much, so I added 2 tbsp. and I wish I would have been braver because 2 was not enough. I also agree with the reviews that this is not the traditional red velvet cake, so if that is what you are looking for, keep looking. However, it is an easy recipe and is a great tasting cake. I did not use this frosting recipe.

Good Old Fashioned Pancakes

Excellent pancakes. I wanted a fat free version, so I substituted 3 Tbsp. apple sauce for the butter. I then added vanilla and a little honey to increase the flavor, since the butter was gone. They turned out fluffy and did not taste like they were missing a thing!

Quick Yeast Rolls

These rolls turned out very light and fluffy and tasted AMAZING! The dough is very sticky, which made me think I did not add enough flour. However, I decided to let it rise and see what happened and they turned out perfect. I am glad I did not add more flour because that would have made the rolls a lot more dense rather than the fluffy dinner rolls that they are supposed to be. This is my new roll recipe, goodbye biscuits in a can.

Caribbean-Spiced Roast Chicken

This recipe was excellent. Not only did the chicken taste great, but it also looked great. I rubbed the spices under the skin to flavor the meat itself. I also stuffed the chicken with crushed garlic cloves and lime wedges. I could really taste the lime in the chicken, whereas the tequila was not as prominent. This could be due to the fact that I stuffed the chicken with limes. It turned out well because I love lime. I will definitely use this recipe again.

Italian Cream Cheese and Ricotta Cheesecake

This recipe was delicious! I had leftover ricotta, so I tried this recipe. I didn't have enough ricotta or cream cheese, probably about 3/4 of each. I simply cut back on the other ingredients a little. The fact that it was still delicious says a lot about this recipe. I did add a brown sugar crust by mixing about 2 cups of brown sugar with 1-2 tbps. butter (just enough to make crumbly) then press into the bottom of pan. I also did not have a springform pan, so I improvised with a square cake pan and it still turned out great, although it may not have looked as pretty. For a little something extra sprinkle chocolate chips on top before baking or drizzle caramel on top just before serving. Excellent recipe, I will definitely make again.
