Peanut Butter Cupcakes

I used cake flour instead of all purpose flour and it made it sooo silky. Then I added a vanilla pudding frosting to the top so that it just made a perfect dessert all that much better!!!

Lemon Apricot Cake

This is hands down one of the best cakes I've ever tried to make. The only disappointing factor was that I couldn't really taste the apricot in the cake all though it did make it very moist.

Hawaiian Waffles with Pineapple and Coconut

This recipe was very interesting. I think if I were to make it again I would puree the tropical fruit medley that you get in the glass jars at the store and possible add just a bit more sugar or honey.

Thai Chicken Cabbage Soup

I think that this recipe could definitely use some spiceing up besides just the chili sauce I think if I make it again I will add some garlic, cilantro, Thai basil and since I used low sodium chicken broth some celery salt, possibly some coconut milk and lime juice. Now that would make a soup!! I have to say the aroma of the soup is great! But the taste could use some beefing up. Perhaps I will keep this recipe in my box and use it as a base to build on.

Shrimp and Feta Cheese Pasta

Well the husband is usually the final grade when it comes to meals. It seemed like it would be too flat with just the ingredients it called for so I added a Greek olive medley mushrooms and green onion to it. It still seems to be lacking the big wow but I can't put my finger on what that would be. I liked the recipe for the most part it was a nice light late night meal. I'll have to think about what would give it that wow factor and try it again. Thanks for shareing
